There has been a lot of discussion of what brand and flavor of sausage makes the best fatty. It came to me this morning, why not grind up some quality ingredients and roll your own. I haven't done any of this so wouldn't know where to begin. Sausage makers, speak up. I know there's lots of info available on this but I'd definately want to hear what the Brother who grind have to say.

I've made my own breakfast sausage. Problem is, If you can get the good stuff on sale, you can't beat the price by making it yourself. I haven't made any in awhile, but the last time I did, I ground up maple bacon in it and it was fantastic. Would have been real good as a fatty I'll bet.

I agree with Greg. You can make better and cheaper than you can buy. Scarf up some picnics next time they're really cheap. Debone and smoke the bones for making beans. Aslo save some of the fat; sausage shouldn't be too lean. Add whatever sausage spices you like and grind away

We've tried a couple brands of "pork and bacon" sausage and these are our favorites. The freshly smoked flavor plays off the smoke cured flavor of the bacon content well. I've bought those big boxes of bacon scraps for cooking before. My idea was more for coming up with something unique in the way of spices more than serious economic advantage. I think it would be fun to grind up a batch and try several different spice combos and intensities. With my peppers planted and looking healthy and happy the thought of a little Jalapeno added to one sounds worth a try.
Mark, thanks for the skinny on the meat to use. I told the OL I thought shoulder (cheap) would work, glad it will. Now I gotta get my Kitchen Aid accessory pack ordered. Noticed the other day there is and ice cream making attachment for the big kitchen aid, damn I've got the little one.

If you have a Bed Bath and Beyond or a Linens and Things nearby that might be the way to go. It is usually cheaper before one of those 20% off coupons, and that isn't including shipping.

Man when i first clicked on this thread I thought it was going to have tips and tricks. I guess I will stick to the sweets....

All the Old Men in my family did their own Sausage from fresh butchering Hogs until they got Jobs and never again, just ain't worth the time, mess and effort. Find one you like and continue to buy it. Just, my past experienced $.03 worth.

I agree. Roll your fatty in spices or rubs that you like, experiment
or not, just enjoy.
