$.99/lb? Hmm, it's about...250 miles to DFW; my Nissan gets 20 mpg, so that's 12.5 gallons, twice; 25 gallons at $1.85 is $46.25. I wonder how much beef I'd have to buy to break even? 8)

Excel brand has been selling at $.99/lb at all the major grocery stores in Austin over the past few weeks. I think Excel recently had a recall of some beef products, so may due to that. I don't mind, just good, inexpensive brisket.

Excel is a brand, owned by Cargill Inc for over 10 years now. They use blue and black stamps..the blue is for choice, black for select. There may be other colors, but those are the ones I see in the stores.

Getting ready for my quarterly Sam's trip. Can't afford to go there anymore.
Any ideas on meat. I always get their baby backs, might look at some short ribs and see if they have any briskets. Might get a few fatty's too. Maybe some butts, and brats. Maybe I shouldn't go...

If you like pork chops or pork loin take a look at that. DFW, Austin, and San Antonio usually runs between $1.88-$2.00/lb. We slice them for chops which beats the grocery store prices. Stuff them and toss em in the smoker, grind it to make our own Italian Sausage etc.... If you like sausage see if they stock Slovacek's. It's made here in Tx. and I find it in most Sam's. The Jalapeno is good stuff, just use a fork on the casing and toss in the smoker to flavor with smoke and cook out some of the grease. Earl Campbell Hot Links, probably aren't allowed N. of the Red River, but if so those aren't bad prepared the same way as the Slovacek's. Grab a package of the Hoagie Rolls if they have them, 12 for $2.50 and outstanding for filling with some leftover Q.

Is Slovacek's like a kielbasa? or breakfast sausage? I like anything with jalapeno in it. I've never sliced up a pork loin for chops, I guess there's no reason not too? that's what center cut chops are, right?

http://www.slovacek.com/ Should explain the sausage. I think there is a thread here where it's mentioned. I like it in one of the hoagies from Sam's with the mustard of the day, a little chopped onion, grated cheese, and some fresh chopped jalapeno.
I like slicing up the loin for chops because I don't pay for the bone, and they seal well with the foodsaver. No bones to poke a hole in the bag. If the chops get too old out in the freezer then they get ground up to make Italian Sausage. Final bonus is that I can make them as thick or thin as I want. If you ever did a tour in Germany and want to try your hand at schnitzel it's a lot easier to cut your own meat and pound it out to get the size you are looking for.

You don't pay someone to cut it either. Excluding sales, full loin is alway $.50 to $1.00 cheaper than chops. Another plus for loin, is Jorge can serve pork loin to his Dad and know he's serving him one of the leanest meats suitable for Q.
Mushrooms are an excellent moisturizer for lean meats. I've never done it smoked but a pork loin, stuffed with seasoned mushrooms is awesome. Stuffed or covered with Stove Top is good, but stuffed with mushrooms, onion, garlic, parsley, tarragon and basil is knock your d**k in the dirt good eats. Fark it, that's one of the things I'm tryin' this weekend.

Do you guys slice the loin and then foodsave/freeze, or after you cook?
By the way, found full brisket at Sam's in OKC tonite at 1.19/lb. not bad. Pork baby's were a little pricey at 4.67 /lb. By the way Jorge, didn't see any Slovacek or Fatty's at Sam's? Maybe I looked in the wrong place. Can't beat Hoagies though ---12 for $2.67.

If I'm slicing a loin for chops I slice the entire thing the day of the first cook, and foodsaver what I won't cook that day. If I smoke a whole loin one way or another I foodsaver it after it has had time to cool and let all the juices settle back in the meat. If you have stuffed a loin make sure you have the ends tied off well, otherwise the foodsafer can start pulling the stuffing right out.
Slovacek's might not make it out of the state. I'd never heard of it until the Aggie better half clued me in. The Slovacek's sausage is usually kept in the meat dept. and the Earl Campbell Hot Links are usually in the boog coolers near the bacon, wieners, etc.... Hoagies are one of the best deals I've found there, since I love sammiches. If I don't finish a package, and forget to freeze them I'm not going to lose sleep over a couple of buns getting tossed at that price.
Should have also mentioned Franks Red Hot in case you enjoy wings and use it. 1 Gal. for 7-8 bucks I think.

Those hoagies freeze also? How do you wrap. Usually buy and throw most away since sometimes only cooking for a few.
How did I miss the Gallon of Franks?? Always get the 3 pack of tobasco though.

I toss them into a gallon zip loc. Tried the foodsaver but it crushed them. Keep intending to pre freeze in a zip loc and then foodsaver them. Just have to let them thaw and come to room temp, and I'll toss in a paper towel to absorb moisture to keep them from getting soggy/damp.
That particular location may not stock Frank's, but another one within driving distance might.
A pretty cool feature of the Sam's web site is click'n'pull. You can check inventory and prices on a lot of their stuff. Everything they stock isn't on there, and some stores seem to have a more complete database than others. You can also search every store in a state for an item, which came in handy for me when I was looking for a particular brand of summer sausage. Give it a try if you haven't already.
