i had a brinkmann cheapo and got my wsm about 4 smokes ago. It seems to me that when I use the minion method and cut down on the bottom 3 vents to keep temps down to 220-230 I dont seem to have a good smoke ring or exceptional flavor.
I am thinking because it is getting broken in that the lack of air flow to keep the temp low isnt allowing the wood to burn enough and not getting a great ring? I got am awesome ring in some chicken breasts from the brinkman but nada on the wsm. Is it a room temp meat thing or am I missing some peice. using about 4 or 5 chunks of apple and or cherry

I increased my ring by making more of the fuel wood, and startinging with wood in the chimney.

does this help?

yup... thats it.. need more wood. I used 10-12 BIG chunks dispersed thru the charcoal. 4-5 chunks just aint enough. But dont expect the kind of smoke ring you get with all wood, aint gonna happen.

Sorry guy's it did say 79.00 but they claim it was a typo and changed it to 179.00 + shipping.
