pork butt

Saw on iron Chef this weekend a twist on what looked like a pork butt.

They totally wrapped the butt in crushed pineapple. I think he mixed some Br sugar, or something in with it, but either way, it was totally covered with crushed pineapple, then put into a smoker/oven. Expected it to burn up, but looks more like it was encrusted and carmelized. Commentator thought iron chef wrecked the roast and it was burned, but IC said its suppose to look like that.

Looked interesting... gonna try this on friday....


any ideas? Anyone else see it and what the other stuff they added to it is. Couldnt find it on the foodtv website.

this past weekend..Sat or sunday. Topic was some exotic pork.. japeneese pig... the kobi beef of the pig world.....


Dont think it was Iron chef america.. think it was the regular one.
