Brethren,

I emailed my parents (and brothers) regarding the breakfast sausage log
smoking tip.

Here's the response I got:

Tried one of them sausage logs over the weekend. You guys were right. Incredible! Went to the store and got me some jimmy dean, and threw on some homemade (half pork, half goat). Both turned out darn tootin good.

And I agree with brd on the taste of that other stuff.

For the sake of balanced reporting.......

this morning, opened a can of Spam to make a sandwich for lunch. Note that Spam
has a "users guide" on the back of the can. Wife walks in to the kitchen, says, "What
smells? Looks like dog food, maybe cat food."

Dog likes it. Wife hates it.

Just got home from Wally World. They had JD hot on sale of a buck-a-pound. Got a half dozen. :D Would have gotten more, but the freezer is full. :( I have got to get my own Q freezer.

JD Hot, which isn't a lot of heat IMO

I agree that JD hot is not that hot, but it has a good flavor. Some of the logs are hotter than others as well (the heat level can be inconsistant). I keep a tube of African Red Devil Peppers on hand to heat up things to my liking without changing the flavor.

Speaking from experience, I wouldn't add anything with salt in it to a preseasoned meat such as bratwurst, sausage log and spam.

I added a rub to brats and spam. Everything seemed to salty - which I attributed to a combo of fluid loss during cooking (higher salt concentration - on the spam) and inadequate absorption of the rub (brat skin kept the rub from penetrating).

I suspect a (salty) rub on the sausage log may have the same effect as the rub on the spam did. Too salty.

But - if you want to rub your sausage log there Brian - go right ahead.

I throw the Az Pep on AFTER.

But now that I brought it up, I'm gonna roll a fatty in the stuff and see what happens.

I'd be careful not to use a rub or blend that contains ANY sodium (alot have it but don't list it) Would dry it out (IMO)

Even farking McCormicks spices. Gotta go online to get whats in each one. You thought ground black pepper was only pepper, think again. like 40mg of salt, and sometimes other stuff.

Paul Prudomme has some great no sodium chili powders I use as rubs. They're on that site too.
