Hey gang,
I live in the Northern ‘burbs of Boston and I’m looking for a good source for Beef ribs and Brisket. Seems no one around here knows what to do with a Brisket except make “Corned Beef” (God help us all) and beef ribs are hard to come by. Any secret butchery’s around?

You got any Costco, Wally Super Centers, or Sams Club near you?
Some folks (not me) have found the Excel cryovac briskets by the case at Sam's
Costco has the trimmed flats, which others can get.

Wally Super Center here has beef rib, and Excel cryovac briskets. I look for the briskets that are about to date expire (aged beef at Wally's expense) and fold easy, too much cold fat and they won't fold.

At my local Costco they usually have a few untrimmed briskets available. Just ask one of the butchers, he'll be happy to grab one for you and sav e himself the work. :wink:

Thanks for the input. BJ's usually has a brisket or two, but they've trimmed all the fat off. There is a Cosco that I haven't tried. Hmmmm ... maybe tomorrow I'll swing by. As for Wally Super Center ...never heard of it. Funny story. I almost got into a fist fight with a local super market butcher when I tried to tell him NOT to trim the fat off my Brisket. He was insulted that I would suppose to tell him how to do his job. Needless to say I've never been back.
