Been waiting for 'BigAl`s fire basket to arrive before I started Q`ing. I figure I`ll just raise the stock rack for air flow if it does`nt arrive on time. I have a 4½ - 5 lbs fresh ham (shank end) in the freezer begging me to smoke the sum bitch. Anyone try this type Q? I`d be more than happy with any recomendations as far as approx cook times, rubs or other ingreedyents? I know I`ll be plugging her with at least garlic. It`ll be my first Q after I season it on Saturday.
Just one question on seasoning though. It`s mentioned several times here to lube the outside as well as the inside of the Bandera when seasoning. Should`nt the outside remain dry, and if paint peels, just hit it with a spray can of heat resistant paint once it cools?
As always, thanks in advance,
Greedy

If you keep her lubed up outside, she's less likely to peel, but it doesn't totally stop it. When it does peel, just wire brush it and hit her with the heat resistant paint. The only thing I've had to paint so far is the firebox lid. The vegetable oil seems to be doing the trick everywhere else.

season the hell out of it inside and out, every nook and cranny u can find. Alternate between high heat and heavy smoke for at least 4 hours, the longer the better. the outside will get a tacky film on it that will make rain and water just bead and run off it. it'll be a little sticky at first but it goes away in a bit.

Yep, spray on cooking is easiest. I do it before, during, and after before storage.
I hate that farking crunching about to snap sound when lifting the lid

Mine has developed that sound - on all the hinges. My first thought was to hit it with wd-40, but then that stuff is flammable and inedible. Spray can veg oil sounds like the winner to me.

Once in a while, while getting ready for a fry, I will use a slight bit extra peanut oil.
Rust is just starting on top of the firebox.
