Anyone here every smoked pork chops, instead of grilling?

Pork chops will usually dry out on ya if you smoke 'em. Not enough fat.
I always "pin" them with my Jacard tenderizer and grill away :D
I put them on when I do my pork butts. Get the butts going for a couple hours and then slip the chops in under them and let the juices from the butts baste them. They are pretty good that way. I smoke them about 1.5 to 2 hours. You just have to watch them to tell when they are done.

I do pork steaks all the time. Just be careful and watch them and pull before they dry out.

What if you covered in bacon? Would that help keep from drying out?

Yup, inch thick or better center cuts..... I like to cook them real close to the heat sauce.. in the bandera i did them bottom shelf, no waterpan, in the BYC I use the hotspot. Kinda like offset grilling... and take them off at med-rare. (145?) and let em rest covered to medium. One of ma favorites.
(yes heat sauce - heat source)... leave me alone. :)
A quick glaze I use on pork chops.
3 parts apple sauce, 1 part(little less) teriyaki, a squirt of BBQ sauce
and/or duck sauce(saucy susan) and touch of thyme, s&p. Brush it on last 10 minutes. good stuff.

Thanks for the advice guys, going to try smoking some this weekend when in put the babybacks on.
