I told the inlaws that I would bring a smoked ham for easter, so went to the store and bought a 12lb ham and the ingredients to make my special Hawiian fruit moppin' sauce. Got home and there was a message on my answering machine from the MIL saying that she picked up a turkey to BAKE :evil: for Easter dinner and that I didn't need to bring the ham!!! :x
So I guess the day before Easter I get to eat smoked ham at home :P
Anyone else cooking for Easter ?

Wife doesnt want ham smoked, so I just might have to smoke a turkey while she cooks that in the house.

I did a ham offset in the Kettle and she didnt like it, so shes turned off to it.
Its only a 7#'er (still a squable with the inlaws, so now crowd) so I might just go pick me up a 10#er to smoke for myself :P

My saurkraut recipie calls for a cup of gin and a cup of wine :D

Deep Fat frying a turkey and also smoking a ham. Would smoke both, but my sister is begging to try a turkey cooked in oil.

I'm smoking a brisket for family coming from Tennessee (they're bringing me pulled pork); they say the two things they gotta have on every Texas trip is some good Tex-Mex and some of my brisket. They also bring some TN BBQ sauce (was Hog Wild Killa Wet Sauce (good stuff) last time; no telling what kind this time). :lol:

How ya keep them from melting? Figured a solid chocolate one would hold up (after failures experimenting with them hollow ones) but it also just made a puddle in the water pan . . . :oops:

Last night Anne and I were discussing what to have for Easter - still no decision but we're leaning towards a fried turkey. Got one in the freezer. Also mentioned pork loin or standing rib roast -- hmmm, gotta make up our minds soon since the bird needs about 3 days to thaw :D

Midnight, now I'm thinking I want to crack out the fryer and try more of those suggestion on the Fryer thread from a few weeks ago

Considering how many rabbits I kill each year for eating my garden, not a bad idea BigAl. So has anyone ever ate smoked rabbit before? I imagine the technique is about the same as chicken.
I've also got 2 turkey brests in the freezer that I'll take out tonight and all the talk about smoking a ground sausage log sounds good too.

We use to shoot'em, Dad's rule was , "if you shoot'em, you have to gut, skin and eat'em". So I did. Mom would soak them in saltwater and then put'em in plain water and boil them....Squirles same way. Good eating. Dad would say outside of the house, "yep that was good, but the best way to cook'em is on a hand turned spit over a fire, like my dad did'em".
Here, rabbits are smaller than in VA and the Hawks feed on them, but if I had some they would be on the rotissery with off set coals, wood chunks and over a water pan, like I do turkeys.

Mom did not have a crockpot, but I do remember her cooking both in a "pressure" cooker.
Grandmaw didn't have either, so she did flower and cast iron fry just like her chicken which was the best. However Rabbit and Squirrel each have their own taste wich is not any where close to chicken. Damn, now hungry.
Worse, I'm out of SPAM!!!!!!!!! :oops:

I just picked up 30 lbs of butts at Sam's to smoke for Sunday. We're having a gathering in the afternoon at Church, so I bought to show off our cooking. Hope they turn out well! I took off Friday to cook because it's supposed to start raining late Friday and on through Saturday. Weather wasn't going to be pleasent for the wife to cook in. Yep, I have to share the 'dera with the wife, and she's got a good handle on fire control.

Well Brethren,
The Easter Bunnie arrived early, brought us 5" of snot so far and snot is still comming down at 11:00 am MT Sat. Forecast is for Scattered Snot all day and again Sun.
One Daughter and one Son will be here Sun to celibrate my belated BD meal. Daughter had frozen steaks (4) and two hambergers shipped in for my BD present (no good corn feed beef in CO) and she asked if I could grill some SPAM for dinner. So it will be Steaks, Burgers and SPAM grilled on my "Baby" cast Iron grill in the Garage.
Happy Easter, hope you all find your eggs, and Bill, I hope yours are not full of Nutz :!: :lol: :lol:
We finally decided on pork loin. Don't know about "sides" yet - probably some redskin potatoes (maybe mashed with skin and garlic?), etc.
Broke down and actually ate some LAMB last night at a Seder. Of course I'd helped cook it so I knew what was on/in it - lots of garlic, and 11 other herbs and spices. It was ok but not something I'll go out of my way to order or cook. See - I don't turn up my nose at food I don't care for - I may not like it but I appreciate it other's tastes! :mrgreen:

just took off the turkey breast. 7 hours to 162 then foiled and last i looked the little thingy was popped up...on the turkey. PERFECT
i might just have to send a pic!

Not much going on at my house. Easter is kind of a family thing, and I don’t have much of one. My daughter is in Tennessee, and the cousin has to work. So, if the rain holds off, I’m gonna smoke some country ribs, a pork loin rib end roast, and I gotta try that Jimmy Dean log of sausage y’all have been talking about, maybe some chicken parts. I got plenty of beer to hold me ‘till Monday. I think I’ll just kick back, cook, drink, monitor the site to see what y’all are up to, and see who drops by, if anybody.
Oh, the secret sauerkraut recipe, the chops sound great, eat them, drink the gin and wine & bury the kraut.
Al, it’s calling for rain here. I guess it would be pretty hard for snot to stick in 75 degree weather.

That’s what I hate about email & communication of this type. Sometimes, it’s misunderstood completely. That’s why I usually overuse the smiley face option. Actually I was bragging (sorta). I value my “stay at home & do what ever the hell I want to” time. I spend too much time at work. Looking SO forward to retirement, so I can get tired of doing what I want!! 5 more years!!
Lack of family was meant in quantity not quality.
Even as a kid I hated “family functions”. Here again, don’t get me wrong. I love my family, but at a distance. That makes the time spent together more enjoyable, for me. For them too, I think.
Looking forward to seeing my extended family again at Bash III (and some family I haven’t met yet) I hope.

Just took the turkey off.
Damn it looks good. We already ate. it was 160 when the ham was done. too cool yet for poultry.
I used 50/50 charcoal to apple chunk ratio in the kettle. damn that was good. I threw on a Jimmy Dean sausage, and everyone gobbled it up. nice 1/3" smoke ring.
Stood out there with the hair dryer mod when temps went below 250. Got the apple going again, and was right back at 330. (in the kettle, I shoot for 310) calmed down a bit to 302 for about 2 hours.
turkey sammiches in about an hour.

smoked 2 briskets, 1 Pork shoulder, 3 racks for ribs and 2 yard birds. What we didn't eat went back to college with my sons. They're the best fed bubbas on any Boston campus. This was my first big smoke for the season. Here in New England winter lasts toooooooo long. :wink:

Welcome out of hibernation TLarr. You need to get a bigger freezer and stock up in the fall. Freezer hell, just do like my Mom in Iowa, use your porch as your winter freezer.
Now go on over to the cattle call and give us an introduction. You obviously know how to smoke.

Did it with just Kingsfords for the first time (Better half didn't think smoke would mix with lamb) - Al - I need your basket - what a job getting and keeping temps.
Useds Bill's marinade for the lamb - came out very mild - David probably would have snuck some big bites on the way to the back yard.
Brisket was best ever (I did this the day before with oak and hickory)
Chuck Steak was really good
The kids were tough and not good (Cabritro)

Use wood chunks mixed with the charcoal and it will run hotter. Wood burns hotter than charcoal, esp. mesquite. Oak chunks give off much less smoke flavor.

Opps R. I re-read your post. You were trying to cook not using wood (my bad). :oops: You might want to try using chunk charcoal. It burn hotter than reg. charcoal, but also burns faster.

Did just one whole turkey. Will be eating leftovers for awhile, but it gives me a chance to use up some of the versions of BBQ sauce I have from working on my recipe. Besides I NEVER complain about have BBQ in the fridge to pick at.
Last night, my wife came up with the idea to use smoked turkey pieces in a tossed salad. Good stuff.
Of course, I'm pressure cooking down the carcasses for soup.
