i have a confession brothers...i haven't qued in probably over a month. combination of too busy and too lazy.

but the brisket article inspired me. i got an 8 pound flat sitting in the fridge that i just picked up. going to dry season it, no dp marinade this time (no offense TK, just trying something different :wink: ) and try the fat side up resting on the onions trick. might try a fat side down next weekend.

also got some minitiare bells for some bison turds.

sunday can't come soon enough. while that's cooking i'll finally get a chance to chunk that apple and peach i picked up last december that's been sitting in my garage all this time! :)

I recently read a table in the files section about BTUs for different woods. Apple is #3 only behind hickory and some farking thing I never heard of. It's ahead of both oaks, cherry, you name it (assuming the table is correct). Tried some 3-4 month seasoned apple last weekend, burned superb. Not great aroma but great burning.

I think i read somewhere that apples one of thew few woods that are ok to burn almost green. I usually go at least 6 months, but the batch of apple i have i got fresh cut in November and now it burns great.

Talked wood with a veteran cooker yesterday. He told me if I found apple not to buy too much as it begins to decay about 12 months after being cut. Everybody has their favorites, he liked pecan and hickory because they store well.

I get a stash of apple every December. I let it season six months and then use it over the next year. I've never noticed a change in the burn over the year after the first 6 months. And I've never had any left after a year!

Oh, and by the way. I'm a complete failure! I didn't get the brisket done today. I'm going to shoot for Friday. I went out drinking last night and just couldn't get up this morning!

It's OK, son.......You'll grow out of the party mode someday and you'll have plenty of time for your briskets.....take it from an old fart who spent 30+years in bars, dancehalls, and clubs every weekend.

I posted this morning to this thread - maybe I got moderated? Went something like this:

This reminds me of the "You Know You're a Bretheren When..." thread started by KCqueer :D awhile back. Seems to me that a bretheren would have dragged his sorry a$$ up and started the cook. Ya got me little worried brother Neil.

Incidentally - that 4 month old apple wood we burned last weekend burned great. I was amazed.

I'm blaming it on Day Light Savings, which caused me to lose an extra hour of sleep!

I almost started it after I got up and then the wife mod started in at me - "You aren't actually going to start that thing NOW knowing you'll be up to 1 are you?" me - "Was that a rhetorical question?"
