Reminds me of the alignment and balance problems my Meat Mama had when I designed my first rotisserie. There was one solution... the more you used it and the more you got it all greasy with the meat fat the better it balanced.

That design sure helps with the even cooking though which is not such a problem with large cuts but CRUCIAL to a rack of ribs.

I know the less you shift around (which this ribalator makes unessessary) you are going to have a mo' moist product as long as you leave it be.

Don't worry about the way it looks either... the shelves may look like they are tipping, but they won't. They get better with age because he uses what looks like a bushing system.

Very tempted to steal the video, send it to popdaddy and get him to pee on it a bit and funk it up.

Hmmm

Actually it works out pretty well with the 2 spares per pack... St. Louis cut you end up with 2 racks & 2 strips of the feather bones...

I'll let Michael know you think it needs P-Daddy Pee!

Not sure your getting me. The cases come with three racks RIB RACKS per each vacuum pack. I think I saw the original design that used three racks I am thought when it came out it would take a perfect set of three rack. With four you got to open one ctrovac pack to get the forth set.

I am hoping your rib o later is popular to force sift and ibp to pack them in even numbers LOL.

I'm pickin up what you're puttin' down!

Yes, you may have very well seen a ROL with 3 racks... that was actually made because swift BB's came 3 to a pack! It was an "in between" idea.

But then we decided that the original design of 4 trays would offer more sq in of cooking surface and figured people would be more apt to go for it if the space offered was on par with the typical sq in of their grill/smoker. marketing...

This Meat Mama contraption you speak of... One fine lookin wood fired machine!

The one I've seen in action used a counter weight on the open shelf.

I redesigned it and cut the shelves in half so that one side was a static and the other was a rotessire. Got it perfect... then left the shelves and arms under a snowbank in Connecticut when I left. I need to get it back together.

You got any pics or vids of the baby in action? Most of the youtube videos I saw were tests on the fire box & stoker...

Some people just don't get it!

They worry about the little things like "how easy is it to clean?" or "will my meats fall out?". Kind of reminds me of cooking at the Eggfest and a couple people say they are buying an Egg because it will look cool on their deck!

Those 3 packs of ribs are killin' me!!
