says the ribs I cooked today were company food. The Harris Teeter had baby backs buy one get one free. I fired up the 'dera and hung the racks in there at a steady 250. Rubbed consisted of half Tony C and Half Southern Flavor Black (thanks Bill). Cooked for about 2 hours. Wrapped in foil with a little apple juice for about an hour. Unwrapped and cooked for about another hour. Mixed up an apple juice sauce in Smoke and Spice. Damn it was good. The SBH cooked up a double cooking of sauce to have ready and she also purchased some more ribs for later in the week. Cooked today like last week with no pan and the temp never fluctuated 20 degrees except when I opened the door. The was nothing special for some cooks but these were the best I have ever cooked. Tender but not mushy. Take car All...
