There is about 50lbs of venson cleaned and cut--gonna cut that with about 30lbs or so of pork butt plus aobut 5lbs of butt trimmings also.

Plan is to make 40lbs of brats and the rest will be split between a "country" sausage and eytalian. so far so good

While I've made lots of 3-5lb batches of sausage b4 this is my 1st venture into the world of big time stuffing---

so iffen ya hear a scream from th north country probably means that a finger went in to the grinder---or worse yet the ponytail got caught in the enterprise

Well all the seasonings are mixed and the meat is cut for the grinder--warming up the garage now but the wind is blowing about 30mph sucking the heat quick--damn!!

will take some pics for sure

Really want to do this - wife and I are on low carb diet and sausage is a big part - need all the gory uh glory details.

And you still have a ponytail?

okj final report--did 40lbs of vension brats(40% pork), 20lbs of country sausage(50/50), about 30lbs of bambi burger(about 25% pork) and 8lbs of breakfast links--those little suckers like ya get with your big slam breakfast!! damn this fat old boy is dragging his behind for sure!!

Slightly off topic, but I did a Jimmy Dean Mild 1# roll for the first time this week in the dera for about 3.5 hours.

all cherry wood and lump.

farking awesome. nice smoke ring. kids loved it too.

Gonna try other "logged" meats. 5# tube of ground beef maybe, and ground turkey. No spam though :)

alt.binaries. food is a usenet group--1st ya gotta set up newsgroup account through OE(most use) then see if that group is carried on your server----if ya don't know how to do that your isp help desk should walk you through the process very quickly

I ain;t smart enuf to set up a web page(BFG> so usenet provides a good p[lace to stick pics--if only for a few days--depending on retention rates of course

I lurk more in the text group---just can't find the time to get involved

Not to pee on the parade but be very very very (DID I SAY VERY?) careful dealing with binary downloads. Not that these particular pics will cause a problem but make real sure your virus engine is up to date and your firewall works.

As you can probably tell, I don't do the groups any longer!! :twisted:

to qoute a Chicago friend---nothing says excess like excess!! And actully only about 30lbs is in my freezer--love them foodsavers!! guess what I bring to parties--'till its gone anyway
