was in the local Wally world today and saw a smoker I hadn't seen before. It was a New Braunfels Quickset... an oval (sort of) shaped horizontal with a nice size firebox and the stack on the side of the opposite end at grate level....I guess they do listen.. stll not a very big stack.. but an interesting design.. and it was gray.. not black... had a price of $169... anyone ever see such an animal? or used one?

That's the one I've got -- mine is more a moss green color. It was on sale for $155 at Wally World just before Christmas and the wife and boys went together to get it for me.

And Dave, is that pool just a 'little' small for that boat?

It cooks fine. When the family gave it to me I immediately (that day) went and got the expanded metal for a basket (not nearly as elegent as Al's :D) and some sheet metal for a baffle. I also slide an aluminum ban with water under the lip of the baffle to help moderate the heat and add some moisture.

It could probably do with some gasket material on the lids but other than that I wouldn't change much.

So far I've done ribs, brisket and butt. All turned out great. The fire management is a bit different since I went from my ECB to the offset. I like the additional space in the cooking chamber and I use more oak since I can feed the fire more easily.

I used the primer "Modifying the New Braunfels Hondo and Black Diamond Smoker grill" and some good info from www.teddybearbbq.com/smoker_modifications.htm

How is it you landlubbers never realize that the canoe is OUTSIDE the pool cage and leaning on the shed??

I also slide an aluminum ban

Good idea. I wouldn't allow any aluminum in there either..
