I got my WSM fired up for an all nighter... the maiden voyage... have a 11 pound (pre-trimmed) packer cut brisket in there... will put some turkey legs and sausage on tomorrow morning... last I checked the temp read 226... hopefully it will be there when I go back out... I cant believe I might actually sleep and smoke at the same time :shock:

I can taste the brisket already... btw... I just rubbed it with a 1 to 1 mix of SF Cajun and Charbroil... put some oil on it to get it ready and then sprinkled away... no DP marinade...

have a good night all... might see me around... I'll be in chat if I am awake... or if I forget to log out when I go to bed :)

You mean to tell me that youngun of yours doesn't wake you up periodically for temp checks?

yeah.... 189 at 3ish (damn rain)... 226 at 5ish... and 206 at 7ish... just walk out in a slumber and check the polder... gotta love it...

I don't know if anyone else has tried this, but last brisket I made I took some of the rub I used and mixed it with some water and used the turkey injector and injected it. I don't know if it made any difference other than you had spices inside and out.

I do that regularly. Dont like the fact that half of the bark is on the fat cap which gets removed. Them that likes just smokey meat wouldn't like my brisket 'cause I enjoy seasoning it inside and out, then smoking to perfection.

ok... for an update...

sausage wheels were AWESOME (but they always are, pretty hard to fark those up)... brisket was good... hell even bad brisket is pretty good... was not my best work... but I was having thermometer difficulties... I have to get new probes for my 2 polder dual-sensor thermometers... I had real difficulty getting the WSM up to temp and keeping it there... but I think there was some water in the area where the ashes fall, which might have contributed to my headaches...

for a maiden voyage on an allnighter was not a bad first effort...
