View Full Version : Lonely brisket seeks fun loving companions

Gonna do my first brisket over the weekend and am looking for suggestions of some fun stuff to do with it. Seems a shame to feed the beast with all that empty room. Plan to try the Bandera bacon (really want to do this over summer when my tomatoes are in season, smoked BLT's, I can't wait). Any other similar ideas? Also I had butcher cut some inch and a half thick pork chops, usually I'd just grill these like steaks but got to wondering if there's a way to get them in the 'dera or would the be better left to the grill? thanks

I do chops all the time in the bandera. Soak them overnight in apple juice then fire away. Wonderful.

Had the same "problem" last week.
Had the brisket in the Dr P marinade, and didnt want to light up a cooker for just that.
So On Friday night, I raided the freezer and grabbed a pack of bone in chicken boobs, and a package of bacon.
Ate the bacon at 11am, boobs came off at 1:30, and the brisket was served at 5. A great day indeed.
So throw them chops on, near the top of the chamber for an hour or so, then onto the grill to crisp them up.
You still got time to thaw something, so check the freezer :)

Another thought is to throw some steaks on there for a couple of hours then freeze them for the grill later. Smoked Steak.
A couple of Beer Butt chickens do great. Eat them for lunch and the brisket at dinner. Nothing like smoked stuff all day long.

Well........I got 2 pork butts I picked on Monday from Sam's to cook this week while on vacation, but between the wind Monday and Tuesday, a church event Weds., rain all day Thurs, now wind again today, funeral and church chili supper Sat. ...they are still sitting in the fridge. If you want to make the 250 mile round trip, you're welcome to them. Otherwise, I gotta make room in the freezer for them. They are still cryopaked so they should freeze well. I got until the 11th to cook them.
Really, it's been a wasted week with the weather.

Mr. Kick, never really was a pulled pork fan but fixed it for the OL a couple times a year. While butt I did last weekend was in the cooler I stirred up the "pulled pork sauce" from recipes section and damn good sandwich, even tried it with the slaw on it. Now I get why everybody likes the stuff. Still think I could pick up a couple cheaper than makin the drive. Thanks anyway. Sorry the weather wasn't more cooperative with your vacation. Looks like nice weather next week, do some ribs after work, eat the next night. Hope your weekend is better.

try a couple of logs of Jimmy Dean breakfast sausage (or Rudy's Farm or your favorite UNCOOKED breakfast sausage)- cooks in a couple of hours. Truly fine swine!!!

If you only do ur brisket, place brisket low in the smoke chamber and make a heat shield by raping foil around one of your grates with an one fist size opening on the left side and place it above the brisket, you will save a lot of fuel and still have a good brisket.

Sausage log is a fantastic idea, I'll bet the drippings are good for self-basting the brisket too

Gonna have to try that breakfast sausage thing next time I start an early cook. Sounds good.

and not fall through the grid?

I keep meaning to try this. Smokey, do you use the regular, or the spicy? Someone (Jorge, Saiko, ...) mentioned stuffing a pork loin with Jimmy Deans Spicy. Thats on my "things to do this summer" list.
Or hell, might try it Sunday :)
