I would, but it just wouldn't work without you in the back talking about the different taste of various people's nuts. :D
600# too small - oh sure - that's enough brisket for about 1200 people!! :twisted: and that's with BIG appetites -- it'd probably feed 1500 with just one cooking session.

Still too small. I wanna cook for Ribfest here in Naperville. Something like 200,000 over a 4 day period

thats what the lots of them folks that vend those fests do for sure!!! the name of the game at those "ribfests" is good food!!! it is only about making money--which isn't a bad thing but you will eat better in your backyard. Those ribfests are about good bbq as much as "taste of Chicago" is about good food!!!
Imagine all ya need to get a spot at the ribfest would be a few grand buy in--then ask the Old Hickory dealer if ya could demo a unit, use the credit card to get a bunch of ribs and thin the Sysco sauce with some apple juice and you are in business-----but it ain't bbq

Now Buzz, I hear you on its all about getting product out.
But its not a KCBS type event. Ribs arent skinned, its about getting the product out fast.
But you previously spoke highly of Mike and Theresa Lake who ran that KCBS class Greg and I went to.
Well their competition team is part of Ribfest.
I've been to Naperville Ribfest. IMHO, I really don't believe thats a par boil operation.
I know Mike Lake only 7 hours, but the passion he brings to the room, I won;t believe he boils.
Now Taste of Chicago, when you are doing like 2 million people in 8 days, thats a different story.
I'm not saying Mike doesnt reheat. Hell, I've been to Ribfest at 10am and they had 40 slabs on, with no one in line yet.
But again Buzz, I don't know ****. You have a team, and I am just at the cusp of starting a path you are much further down. I hope an opportunity pops up this year where I, and Greg, can learn the real story.
I realise some folks take even cooking ther ribs at those fests seriously--its their living--mick does it, Bill M too(Texas Rib Rangers) and there was a time when I seriously looked into traveling the "ribfest" circuit--it is a good way to make a buck but to me(and maybe only me) it can become the same race to make a buck forgoing quality in favor of convenience and profit.
Maybe won't be long 'till the Chinese figger out a way to undercut that market too---but then what do I know just turned down an oppurtunity to buy local pizza joint 'cause I was scared to take a chance!!! Well that and maybe me owning a bar wouldn't be the best thing either<sf>
and I never did mention boiling ribs---stopped doing that about 10yrs ago--same time I quit using the microwave to get a headstart when grlling yardbird
so when are we gonna get together and cook??

In my state ( 5th vodka cran) I read what you called a rant, thinning of the sauce, and somehow boiled and reheated came into the picture. (In my mind, not in your post)
2 vod/crans later, and I re'read your post. Your right of course, you never mentioned boil. Thiat was my mind inserting that.
I have nothing more to add, because I am nothing more than a backyard BBQ'er at best. 35 people has been my tops, and thats family, no judges. They wouldn't know a McRib from a fark McNugget (cept my wife and kids of course)
As far as getting together and cooking, if you can't make it to Gregs in Sept, then let us know, and we will make it up to Nekoosa.
