View Full Version : Smoked Peanuts

Stan from Texhoma Peanut Co, sent me a 1 pound bag of raw blanched peanuts for me to experiment with smoking. I lightly oiled them and added salt garlic and some of my powdered habanero's. I put them on the top shelf in my stainless steel gril wok for a couple of hours.

The results were very good and hot as hell of course. I think they could have roasted a little longer and/or at a higher tem, perature but I was also smoking about 5 pounds of sausage and a salmon. Once the peanuts coolded down to room temperature they were even better having more of a roasted taste.

Anyway, I guess I'm gonna order a 50-pound sack now.

Mark,
Please tell me you can make it to Greg;s in Sept!!!

If you can, I will have Stan send you 20# or so, a while before the actual Bash.

Then you can mix up one of you special concoctions and bring it over.

I have been waiting to hear about your results. Smoke and nuts. Two of my passions

PS..Greg, you;ll need some plungers.

Congrats on the experiment Mark! I want to start doing some nuts also. One of my partners is begging for some kind of garlic peanut concoction. I myself am partial to smoked almonds and would like to try some pecans also. I think I will experiment with peanuts first though because of the cost. Would rather throw away a couple bucks worth of peanuts than 20 bucks worth of something else.

Greg:

Yoy need to invest in something like my stainless steel grill woks , cause the nut will fall between the grill bars.

Unless the oil ignites and burns up the nuts you won't throw away anything. The process is very forgiving. Costco's pretty cheap for raw almonds. I think it was $7 for a 3-pound bag. But the 50-pound bag of shelled & blanched peanuts was under $1/pound (before shipping) as I recall.

Yeah, I'm planning on making it. And don't worry about supplying me Bill. I'll be happy to supply the Bash. I'll probably bring a large supply and varieties of peppers, etc., too. Any requests?

Stan got back to me with a quote. Here it is:

Your price on 110 pound bag of Blanched Runners ( without skins) would be $100.00 plus shipping of $44.87 total $144.87.

That's less than $1.50 per pound delivered and no shells. So that's still some pretty inexpensive protein isn't it?

Mark,
Let Greg and I shoot you some funds for this. You perfect the smoked nuts in a small batch, then do up 70 pounds for the bash. We'll give out (You'll give out) 7# bags to attendees.

At previous Bashes, people gave out ****. It is not mandatory, by any means. Bash 1, HoboPie Ray came through in a big way with Blues Hog, his own nuts and glasses for all.

Second Bash, Phil, I, Neil, Cabo, David, all of us, brought something or 2 or 3 to give out. Fark, even though Phil and I had all this stuff planned, and guys who came brought more, I cannot over emphasize enough that the best contribution to Bash 2 came from David H in Portland.

This guy is not able to come, but he sends a box of wood for Salmon, some local Beers for Phil, and some Hab Jelly for ribs.

None of us had heard about Hab Jelly Ribs, but by the end of Saturday, we all had nipple hard ons for Hab Jelly Ribs when added in the last hour of the 3-2-1 ribs method. Bees loved it too.

Sooo. Mark, do you get Grill Lovers Catalog? I saw a pan in there that I said "that might work for Marks Smoked Nuts" Wonder if you have that Catalog

Thanks for the offer Bill. Lets revisit the subject in August, before Greg's bash. What I'm wondering is why $44.87 for shipping. Do you think a 110-pound bag incurs some kind of extra "overweight" fee? I guess I need to take it up with Stan.

As for Grill Lovers Catalog; nope, don't receive it. I think it hard to beat amazon prices and free shipping for orders over $25. Besides, I've already made the investment in the following:

1 Mr. BAR-B-Q Platinum Prestige Stainless-Steel 12-Inch Wok Topper

Mark,
Shipping is box size+weight+ total distance zip to zip code+ bussiness or home+a pick up charge+fuel surcharge+handling(every merchant and ebay seller charges this for tape, boxes, salary for printing lables, packing, round trip gas money if not using the extra charge for shipper to pick it up. Sites offering "free shipping" has built in the average cross country to their items price).

I got 15lbs shipped from Stan for just under $10. So $45 is a lot but for 110lbs does not seem bad compared to what I paid.

Isnt there some 70# rule? I thought if it was over 70#, the rates changed to Freight rates or something. Somewhere buried in the FedEx stuff I thought I read that. Or maybe on the US Mail site.

Stan got back to me with a quote for 50-pounds. Here's what he said: "Your price on 50 pound bag of Blanched Runners ( without skins) would be $52.80 plus shipping of $17.68 total $70.48. " That's $0.35/lb for shipping.

So, it looks like the $44.87 shipping for the 110-pound bag ($0.41/lb) included some sort of surchare for being extra heavy or something.

Davewey and shock: you guys want to go in with me?

I'll take a piece of that action Mark. 10 pounds sounds good if that is alright.

Sure thing Greg. Just trying to determine whether to order 50 lbs or 110 lbs. Raw peanuts store well in the frige according to Stan. Problem for me is finding room to store even 25 pounds.

parrothead
02-26-2004, 03:36 PM
Yeah, I would think that would take up a lot of fridge space.

Maybe just grab 50 right now, and 50 in a couple of months.

Nobody here likes peanuts do they?

There ya go mark, leaves you with 20 pounds to play with. THen you can get the other 50 down the road.

How many pounds go in a batch in that tray of yours?

Mark
02-27-2004, 10:47 AM
about 1 lb/tray

parrothead
02-27-2004, 11:07 AM
Are you going to get more trays, or just do little batches here and there when you have the thing fired up?

Give me a shout when they come in!

the high-sided wok will hold more. I've smoked 3 lbs of almonds in it before. Just need to stir occasionally. Only got the 1 square wok though . I've got 4 of the shallower trays; 1 per shelf. I originally got them for smoke-drying peppers but they work great for salmon fillets too. For peanuts, I've got to load lightly so they dont roll off the open side. Se'?
