View Full Version : PRESSURE COOKER BLACK BEAN SOUP

A good use for leftover pork butt/bone

Yield: 6 Servings

16.00 oz Black beans; dry
4.00 c Beef stock; preferably
-homemade
3.50 c Water
1.00 lb Smoked ham hocks
1.00 md Onion; chopped
1.00 md Leek; chopped
1.00 md Celery rib; chopped
4.00 tb Dry sherry
-----spices-----
0.50 ts Pepper; freshly ground
0.25 ts Thyme
1.00 Bay leaf
0.50 ts Salt
0.5 ts cumin
hot pepper to taste

Place draining basket in pressure cooker. Rinse beans. Place them in
basket, with all remaining ingredients except sherry. Cover cooker,
lock lid and bring to pressure then cook 45 minutes. Lift basket and
allow solids to drain. Remove pork knuckles. Puree remaining solids
in two batches with metal blade of food processor. Return puree to
stock and stir ro combine. Add sherry to taste. Cut meat from ham
hocks into small pieces and add to soup.

Love black beans at favorite Mex resturant. Your BBSoup sounds great, wish I could come buy and get a big bowl.

Top with diced hard boiled egg and spanish onion!! :D

My wife and I grew up on the Cuban version of black bean soup. When we were living overseas our families would put black beans in our "care packages" :mrgreen:

I forgot that about you Mark.
You have posted some great stuff on pressure cooking.
I forgot all about that aspect of cooking.

I can't believe I tossed out 2 pressure cookers when I cleaned out my folks place when my old man died.

There is a place that serves Black Bean with an over easy egg on top. The fist time I tried it, it looked strange, next time I asked for two eggs. Man is it good! :D :D :D x10

Yep, pressure cookers save energy, time and get the most out of soup bones.

Beans are excellent for breakfast - with or without egg! :D

Actually, Anne and I got used to eating frijoles with breakfast while we were in San Antonio -- different dish, obviously, but the carbs, proteins, and such in the beans do make for a great start to the day.

Unfortunately, the associated flatulence tends to make most people avoid beans in the morning (pan to scene from Blazing Saddles) :mrgreen:
