Followed the 2-2-1 method. I'm really impressed.

Also included a pic of the beer butt chicken for JT.
We'll get together soon bro, Promise!

Added: I HAD to try the ribs, Excellent, best I have ever made!!!

PS:::see the pears and apple slices in the water pan?

2 hours smoke (mine went more like 2 1/2 hours honestly), then wrap in foil for 2 hours, then unwrap for 1 hour, this is when I sauce

I've never made either the ribs or the bbchicks so I'll have to try 'em. Damn they look good!

I went with 3-2-1 on my last BB's, and they weren't overdone at all. You could probably get away with either 2-2-1 or 3-2-1
