On Saturday February 21, Mike Lake will be conducting a KCBS Judges
Class in Chicago. His e-mail is: rrribs@internetni.com. J. Staggs is
hosting the class at his trucking company which is near Halstead and
Canalport. This would be a great opportunity for the Chicago area bretern to learn alittle about comp. BBQ

So is it a 3 some?

Halsted and Canalport. Can you say "****sville". But they start knocking down alot of the projects in recent years there, so we should only ger car jacked like twice or something, no more than that though.

I think she said it was going to be $65 that includes a membership. Something like that.

That's pretty cheap for the info/knowledge you should get and you get a year's worth of the Bull Sheet too! I just checked the MIM site again. They took the link off there for their list of judging classes. I guess I'm definately gonna have to find a KCBS class now.

Excellent day at the KCBS judging class.

Bill and I both arrived about a half hour early, hung out, and finally got to register. We are now both members of the KCBS. Learned a ton of **** about the whole judging process. I would recomend this to anyone thinking of doing competition cooking. Don't know if I'll ever actually do any judging, but it was a good day eating BBQ, meeting people into Q and learning the ends and outs of the behind the scenes action at a cook off.

Plus I got to spend time with Bill again, which is of course always a plus.

glad to see ya made the class ok--it sure does help if ya ever want to compete---gotta come to Shannon in July for the Ill State Champ--I'll be either cooking or judging--depends on the budget

Greg and I are thinking of going to, 2Fat. And thanks for the notice on this class. First one they ever did in Chicago.

I might have a chance of judging the Naperville RibFest. The mayor of Naperville, and 4 other the even organizers where at this class. Struck up a conversation during break.

Hmmm...ribs.

I had a great time with you too Greg. Some good laughs for sure. And thanks for the Super Smokers Texas Hot BBQ sauce.

2Fat knows this, and now Greg and I do (other competitors/judges in the Brethren too) but I want to share with you all the biggest lesson I learned today:

Judges are not experts.

Now you might say "duh", but let me explain.

Greg and I were there. A guy from Sterling IL was with us, fabricates his own pits like Greg. 3 other people at our table. One, a younger guy from Chicago, North Side, who likes to eat BBQ, but does not cook it.

Another guy, retired, Bloomingdale (well off) who thinks a hamburger on his Genesis grill is BBQ. Third guy, retired, like ribs on his gas grill but doesnt take the membrane off cuz its too hard to do.

So at our judging table, just over half the guys really knew what smoking was (I mean really knows from eating it all the time) so we can tell if something is too smoky, to mild, too acidic, etc. The others have only "Chili's BBack Song" to fall back on.

There was another table with competition guys, and festival organizers. So 1/3 of that table had "back yard" experience. Couple tables had appeared to gotten no closer than FoodTV to real BBQ before.

So am I an expert? Hell no, I'm not that vain. But brothers, if you ever enter any contest, no matter how big or small, just go into it and come out of it knowing that you might get judged by people who don't know your "style" of BBQ.

Just putting an entry together to meet the varying levels of personal preference is impossible.

Second thing I learned, each slice is an individual. I took a slice of briket, Sterling took the next slice. His had perfect tenderness, mine was a rubber band. Uniform slicing is vital to get your product judged evenly.

That was one hell of a good time though. Wish we had more time to stay after and polish off those 10 racks sitting there. :)

Probably will depending on when it is. The guy teaching the class said that everyone at the class today would get an invite to judge at shannon.

Heck you can judge it----I want to get an invite and cook in it--but pork is my weakness--gonna have to tweak it up some this year!!!

Thanks Kick, but with any luck I'll be turning over the house keys to someone else that day. (bout time we sold this thing!) I don't think I'll see one this far south but maybe somewhere in MO.

Will do....don't know if the new guy bbq's or not but he's getting a heckuva backyard to do it with. Hopefully, we'll have the new house built by Christmas....LOL....if only I could fast forward to then.
