I assume you mean outside one's pit. (?) In that case I would say, oh boy it has to be a tie between my slicing knife and thermapen. If I had to choose I would say knife.

Multiple print-outs of timeline with duty assignments. Makes teamwork easier. Also,
3am - 5am can get a bit confusing, always nice to have a reminder of what you need
to get done...

Forgot, a backup plan. Extra stuff just in case something happens. BTW, *something*
always happens... If it's electric, it'll fail or you'll lose electricity. If it's gas powered,
you'll run out of gas. If it's a knife, you'd drop it and the blade will somehow break. If
it's a clock, the batteries will go out (always wear a watch too)... Redundancy.

We have two Box B!tches we just could not live without. Not having to make boxes is priceless! Seriously though I would have to say our hot water heater or our enclosed trailer. Ther is mothing better than getting home Saturday night and not have to worry about unloading anything.

My PCV table leg extenders. I'm 6'6" and those Sams tables about killed me the first time out!

I prefer to have my chicken, ribs and briskets prepped, vacpak'd and ready to roll, so I can focus all my energies into dolling up the canopies with the all the accoutrements I've dragged along to win "Best Booth" award!
