Stopping in Milwaukee this weekend.

Hope to pick up some of the real Brats from both Uzingers and The Brat Stop off 94.

Greg, you want me to pick you up some if I make it there?

Who was out Milwaukee guy who went West. It was either Heath or Portland DaveH. (who is MIA by the way)

Yeah, just regular ones. Not no hot crap or strange stuff. Cheese is good though.

If they last in your freezer without getting eaten before we get together again.

Yeah, I never get those "exotics". Just plain for me too.

I throw them in the freezer the minute I get home (Bobaks, by the way, makes a great fresh bratwurst)

And I'm sure we'll be seeing each other long before September or something. Just look at all the holidays we have before then:

Damn dude ya gotta start making your own brats!!! must have a spare corner to convert to sausage making room<bfg>
The Brat House ain't too bad--at least they have a bar and TV when I have to stay in Kenosha for work!!

I have steered clear of them in the past, but after my jalpeno peanut binge, that sounds damned good right now.

I hope to get some Penzey's Brat seasoning and make some myself... just got the sausage stuffer adapter for my kitchenaid (steer clear of this joke bill... :) )... www.penzeys.com they have great spices and such... lots of different things and you can order in "bulk"

You got a recipe for your Brats ?

here is the basic one---sometimes add hot peppersand/or cheese. Also usually add the left-over fat from when I trim butts for competition. I think fat is what gives the good "mouth" feel to sausage

have used Penzeys(love their spices) but usually have to double their amount to get much flavour--imo of course. can mix pork beef about 60/40 or so a different flavor

10 lbs. boston butt
3 T. salt
1 T. sugar
2 T. dry mustard
1 T. MSG (replace with an equal amount of salt if you anti MSG)
1 T. ground coriander
1 T. ground sage
1 T. paprika
1 T. black pepper
1 T. ground rosemary
2 t. cayenne pepper
2 t. groun nutmeg
1/2 t. ground cloves
2 cups water of beer or a combo of the two*

Add all spices to liquid..blend and put in the freezer while you cut the
meat to fit grinder. Add cold spiced liquid to meat and mix well. Grind
through fine plate..mix well again. Stuff into medium hog guts. Twist into 5
inch links or therabouts. Refrigerate immediately and freeze any not used
within a couple of days.

*Beer seems to intensify the flavor of the spices. So if you like a little
more pronounced spice flavor use beer..(Budwieser works well). If you like a
little blander use water. To split the difference use a cup of each

We were late in leaving Milwaukee, and rushed home with the "dog's been 8 hours in the house and she's gonna **** the carpet" mod going on.

I'll stop at Bobaks and be sure to pick you up some Bratwurst before we get together again.
