View Full Version : a chicken wing day
Just put about 15lbs or so of wings on BWS Comp for a party later today. Wings are seasoned with Dixie Dust and will be sauced when done with a mix of Blues Hog(1qt), Franks(1qt) a buch of honey and a liberal dose of smoked habenero pwder then crisped and carried to tavern.
Still gonna, make a pan(or two) of pig candy, bacon and brown sugar smoked 'till done.
And for dessert there will be a pan(1/2 sheet) of brownies with a lyer of hab jelly/cream cheese in the middle
what ya cooking???

I did the prime rib again. rubbed with montral steak seasoning, garlic and onion. But the real hit, i got those little pork tenderloins from Costco. the ones that come in the 2 pack. each pack has 2 small loins in it. Made all 4 with different rubs, 1 Cajun foreplay, 1 Souther flavor black, 1 southern flavor cajun and one with my rib rub. Those little loins are great. They reached 150 in about 80 minutes at 250. I foiled each up and let them sit in a 200 degree oven till dinner about 2 hours later. DAMN. they were fall apart tender. Sliced them into 1/2-3/4 inch medallions and served them as appetizers. people devoured them. the smoke ring was about 1/2 inch all around and bright pink. These were a great surprise and definately being added to the list of easy but awesome. Roast I did like last week. brought to 130, A quick shot over the coals on a grill, then wrapped and rest till it climbed to 145-150. Problem was, everone was stuffed on the porkloins.

<sigh> no q'ing for me today. wife mod says no q until I get the bandera
moved farther from the house (something about smoke and washing and
drying clothes.....)
The local Knight of Columbus had a fundraiser for a kid with leukemia so
I picked up some chicken and sausage and pinto beans. Wife said I make
better chicken.
Beans were great. Can't get anybody to pull my finger though. The dog seems
to be breaking the wind a lot today......

Only about three hrs to Milw but am planning to be by the windy city Sat for a chili contest in Orland Park--not cooking but hanging with some friends that are coming up from down south for the competition--both ICBS and CASI
