View Full Version : The Laziest Q Ever Done

Today I needed to cook some ribs for tonight's feast (my terms not my wife's). I came home for lunch and started the Bandera heating up. I put the ribs on and went back to work for the remaining 3 hours of my shift. How did I manage to cook the ribs you ask??? I used two cell phones and my neighbor's son (Christmas school vacation). I would call him up every 30 minutes and ask him the temp on the smoke box. Then he would tell me what the mesquite in the firebox was doing. I even got him to use the "Magic Rock" correctly. This is the rock which props the firebox lid up to dump heat. I had a customer see me use the phone and ask me "Talking to the wife?" I told him that I run a BBQ hotline and was helping a caller. The ribs did just fine and the young lad got to take a bunch of ribs home to his family. He has not earned a scuba mask yet, but he may get a snorkel. There is hope for Today's Youth!

I tried that once. Left someone in charge of the firebox while I ran to the airport. Came back to 20lbs of kingsford in the firebox... and a small fire, resembled Rome burning.

Ask Colt. He can trell ya all about it. :twisted:

LMAO. You're right Phil, we did try that but it was only a half-ass attempt. We shoulda been callin' Colt every 5 minutes to remind him. 8)

This is when I use the WSM. Did an overnite cook this past Sat. Started at 8:00 pm Meat on by 9:00 didn't touch it until 6:30 am Sunday am, still at 236..and smelling real goooood, god I love that WSM.

I've had to go and leave the 14 year old in charge before. He's all about cooking anyway, and he did a real nice job. He followed mt instructions to the T.

I don't trust anyone.

My wife called one Saturday "cars broke, come get me" I looked over at the fire box, and saw the blue coming from the chimney, and gave her the number for Firestone and told her to deal with it.

Dammit... getting made fun of and been on vacation for a week and a half :)... yer lucky I took it out of the bag phil... damn they burn pretty :)

Lighting your bandera... the Colt Method...

1) fill cold smoker with prime cuts of meat brined with "Dave's Insanity Sauce" and rubbed with dried Habenero powder...

2) Light one easy light 20 pound bag of Kingsford (I know it doesnt say "easy light" on the bag... but damn it burns nice when it is dry...)

3) put 3 big ass pine logs in the firebox... the more sap the better...

4) Drop fully lit bag of charcoal on top of pine logs... make sure to cover logs with lighter fluid... and if the charcoal and logs dont fill the firebox... top off with matchlight charcoal... it lights quick...

5) Baste food often with Teriaki Sauce and KC Masterpiece Q Sauce...

6) foil everything after 6 or so hours... cook till fire burn out or firebox melts...

7) crack open a warm shaefer and slam it... get out the fork and chainsaw and eat away...

:?: Pine logs for Q...all pine is avoided in the south. Even a tiny bit in the fire would make anything uneatable...You got a different kind of pine is NY or just kidding.

He is kidding. He let the fire (nearly) go out at the first Bash we had, and he's been catching **** for it ever since.

c'mon he didnt let it go out. Colt is the first person to get 20 lbs of kingsford going with a single red coal on the bottom. :shock:


He spet half hour blowing into the damper, but it worked, then agin it would've been faster if he opened it first. :?

MikeG.. we aint that nuts, unless ya like pine tar on your brisket, we dont use pine here either.. or any softwood for that matter.... cept maybe a cedar plank under the salmon. :P

Thats why I bought a Treager Smoker, I dont have to worry about tending the fire all the time, no flare ups and its very consistant, I know half the fun is in the fire tending, but damn when the food comes off the smoker tasting as good as it does, I'll settle for watching the smoke as I'm reading a book or even take a nap and not have to worry.
