Here are the simple and unchanging list of rules for the BBQ Brethren Throwdown...

1) The dish must be Grilled or Smoked during the cooking process, or feature Grilled or Smoked ingredients in a prominent manner.
2) Entries must be cooked during the current throwdown period ( 11/27 - 12/6 ).
3) All pics (any number) must be submitted by Midnight Central Time on the night of 12/6.
4) Only one picture from one dish will be used for voting, so please specify which one you want used, otherwise I will choose and my decision will be final.
5) If you have any problems with any of the entries, believing them not to be qualified for any reason, please use the ***VOTE*** thread and exercise your power of voting against those entries. Any complaints posted in any Throwdown thread, or directed to me via any other means will be ignored.

The voting will begin Monday 12/7 after I submit the "Vote" thread and will run through Friday 12/11. All votes will be public.

Don't forget the Holiday Festive Throwdown (http://www.bbq-brethren.com/forum/showthread.php?t=72984) is still accepting entries until midnight Sunday night (11/29)!

Our next category will be decided by the winner of the Hot and Fast Throwdown (http://www.bbq-brethren.com/forum/showthread.php?t=73200).

First the nose on Master's Easter Island statue collapsed and then the Empire State building buckled at the 23rd floor. Master was on the phone complaining about cheap third-rate bacon in last shipment, then went to his room with all our Fattie-Steins. I have not seen him in two days. I have nothing to submit except Sunday dinner. It is just smoked MOINK balls on a fattie-plate, salad in bacon bowl and Bak'n potato with Antwerp-style ale. We don't do dishes.

Battling the elements was the name of the game today. The outside temperature never got above 3°F, but the pit temp was rock steady at 200°, and the finish temp on the Buckboard Bacon was between 151° and 157°. It snowed most of the day, as you can see from the picture above. It made pit shots tricky.....

This was cured for 7 days, with pepper added at the beginning. Here it is before and after rubbing in the Buckboard cure.

Following the cure, it soaked for 8 hours and rested for about 12 hours. The smoke was apple and cherry. Smoke time was about 3-1/2 hours, and I rotated the lower pieces up to the top level about halfway the cook.

But in the end, It all worked out, I got 18 pounds of Buckboard, and more of my buddies will be getting some holiday gifts.... Chris, this last shot with the slice missing will be my entry.

Holy Mother of Heat Attacks!! I just felt a few arteries close shut!! That is insanely good looking. OMG!!! Did you really eat the placemat? Tell me you didn't. If not, send it to me. I'll eat it! You dan bacon Man!

I have to agree with Plowboy. The last pic is yummy! but the second to last is YUMMY!

And Plowboy, I was expecting to see Mommy kissing Santa Claus or a bigger Bacon-Henge. What happened? Did you rediscover your sensibilities?

Sorry Bob, you'll have to eat your own placemats. One of the perks of being a lab assistant in our lab is that we get to eat the experiments!
