Any one ever smoked a goose? If so, how'd ya do it and how was it?

Not done one, Have a friend that has some ggoose breasts he is going to give me to make some jerky.

Are you talking wild goose or farm raised?
I have done wild goose but only the breasts: marinate over night, sprinkle on some spice, wrap in bacon and smoke over apple or cherry wood for about 1 1/2 - 2 hours. I like them sliced and served on crackers with a drop of sour cream and slice of pickled onion.
I used to do farm raised goose every now and then but the price got so high that I swiched this year to duckling( almost as big and tastes as good or better.)
I did my goose the same way I did my ducks this year: put slices of celery, onion, apple, and oranges inside goose. dry outside of bird and rub with a slice of orange. Lightly oil bird and put on some rub, not too heavy. cut two slits in the fat by the tail and tuck the legs into them so that it holds everything inside from spilling out.
Smoke over apple or cherry and baste every half hour with orange juice mixed with a touch of olive oil. cook for 3-41/2 hours or untill meat thermometer tells you its done.
I usually serve mine with a cherry sauce that has whole cherries in it, be happy to loan you the recipe if you want.
Thanks midnight. I'll probably go farm-raised if I can find one and depending on the price. Otherwise, I'll get a duck.

After reading this thread I may have to smoke me a duck for the holidays.
