I fired up the Bandera today to cook a turkey and some boston butt to take to the staff at my mom's assisted living center. Not really knowing their taste, I opted for unadulterated meat (except for a little Kosher salt). The turkey is a wonderful light smoke flavor. the butt was so tender it broker in two while taking it out and would almost melt in your mouth. I also threw on an extra turkey and a chuck roast (love the beef) for us prepped the same way. All the meat was so flavorful and rich I may almost swear off rubs, marinades and brines. Probably not but it is nice to know just plain meat is just plain good...

Oh yeah!! Glad everything came out great -- cooking for a group like the ALF staff is a great way to spread the "Truth" about 'que!

At B2 just about the only sauce was drool!! We hab jelly glazed some ribs and would occassionally break ou the Insanity Sauce just because we could!!

Very few of us used sauces and we had no sides (unless you count the stuffed jalapenos on Saturday) until late Sunday when we finally broke out the cole slaw with the pulled pork.

You are so right that it's "all about the meat" :D
