After all my jaw jacking I finally made sausage over the weekend. Four bone in butts came out to about 15 lbs of meat boned out. Seasoned and ground it let it set overnight Saturday. Found out the grinder works much bettter with the chopper blade in and not just the plate. Duh. I made polish and added a pound of Japs seeded. If the smell has anything to do with it ought to be fairly good. I stuffed it Sunday, took about three hours with a "little" drinking and cowboys game. Game was a waist of time but drinking was okay. Taste taste to follow, so my fingers are crossed. Only problem I had was keepig air out of the casing. Would have cooked some up yesterday but to damn drunk to fark with it. Real pleased with the KA Grinder stuffer.

Whew, I was a little worried to click on Brians thread that was entitled Sausage Experience.
Glad everything turned out good. It's about time for me to start making some sausage too. Still haven't tried stuffing them yet, but maybe this year is the year.

Congrats! Yep, the grinders do work better with the knife installed :D
Jalapeno sausage sounds pretty good -- I know out your way Johnsonville (and just about every other sausage maker) makes a jalapeno or jalapeno/cheese sausage.

I know I'm hijacking this thread, but...
Am I the only one who can't get jalapeno sausage. Are you guys finding this in grocery stores, or do you have to get it from a real butcher? Maybe it's just Oregon, and that's the way it's gonna be.

I can get it at a local butcher down here. They use one Ounce of chopped jalapeno per lb of meat for a reference. I have also had the Johnsonville which isn't to bad. I'm just trying to replicate it.

How about some fromunda cheese? I'll send ya some.
I would imagine that cheddar goes pretty good with the jalapeno sausage.

I made Italian Sausage using the KitchenAid Mixer/grinder. I have the 'heavy-duty' one. I did okay but it took a long time. I also used the fine grinding disk which I like better. Even though I grew up on Italian sausage, I do not care for the larger grind style.
I made a lot for work and people are still asking me to bring some.

I made sweet. Was pretty good stuff. Just a basic recipe though, nothing special. Try recipesource.com if you haven't already. That is the best place for recipes that I have found yet.
