...as chosen by thirdeye, the winner of the Wild Game Throwdown (http://www.bbq-brethren.com/forum/showthread.php?t=72252)!

The idea for this one is to cook something hot and fast. For example, high heat grilling, or smoking at 275* or higher as in the hot and fast smoking methods some like to use. As long as you cook it hot and fast, then it is eligible.

Here are the simple and unchanging list of rules for the BBQ Brethren Throwdown...

1) The dish must be Grilled or Smoked during the cooking process, or feature Grilled or Smoked ingredients in a prominent manner.
2) Entries must be cooked during the current throwdown period ( 11/13 - 11/22 ).
3) All pics (any number) must be submitted by Midnight Central Time on the night of 11/22.
4) Only one picture from one dish will be used for voting, so please specify which one you want used, otherwise I will choose and my decision will be final.
5) If you have any problems with any of the entries, believing them not to be qualified for any reason, please use the ***VOTE*** thread and exercise your power of voting against those entries. Any complaints posted in any Throwdown thread, or directed to me via any other means will be ignored.

The voting will begin Monday 11/23 after I submit the "Vote" thread and will run through Friday 11/27. All votes will be public.

Don't forget the Beer, Wine & Spirits Throwdown (http://www.bbq-brethren.com/forum/showthread.php?t=72134) is still accepting entries until midnight Sunday night (11/15)!

Our next category will be decided by the winner of the Cakes and Pies Throwdown (http://www.bbq-brethren.com/forum/showthread.php?t=72296).

A cookin' buddy in Florida recently sent me some Brazilian skewers and a few bags of home made seasonings. :cool: :shock: Well these boys are a perfect fit for the small Egg. The U-shaped tang grips really well, no spinning like on my other skewers. I did some fruit on them the other day, but tonight I put them to the test with some marinated chickie breasts & onion petals seasoned with one of the seasonings that came with them called Indian River Rainbow Pepper blend.....

EDITED: It WAS cooked the livefire method, which I fully believe in... on a BGE!

I like your setup, Thirdeye.. you can fix dinner, then fence with your dinner guest after you're done!

Definitely my bad! ;) I was looking at it on a small screen (coworker's crackberry), thought it was on a stove. I will say that the original post made me want to make some of it soon, as I've never made CFS.

Man, I'm putting my foot (keyboard) in my mouth a lot this week... And have to apologize yet again... I'm sorry! That's what I get for being a nazi.

I adapted Michael Symon's Spicy Sriracha Chicken Wings to my 30-20-10 Wings.

Ingredients
24 ea chicken wingettes and drumettes
1/8 cup coriander, ground
1/2 teaspoon cumin
1 Tablespoon kosher salt
1/8 cup olive oil
1/3 cup Sriracha sauce
8 Tablespoons butter
1/4 cup basil, fresh chopped
1 ea lime zest
4 cloves roasted garlic

Instructions
Make a marinade with coriander, cumin, salt, and oil. Marinade wings for 4 hours in a ziploc bag.

Over very low heat, melt butter and wisk with basil, lime zest, sriracha sauce, and garlic.

Get your Big Green Egg or grill up to 350f on indirect heat and cook for 30 minutes. Flip chicken.

Cook another 20 minutes and toss in the sauce.

Cook 10 more minutes, to crisp up the sauce. Serve with the usual suspects (celery & blue cheese or ranch).

I didn't get a plating shot last night of my entry, so I'm adding it here, though I tend to like the grill shot somewhat, in the dark.

It's plated with a knock-off Cracker Barrel potato casserole and balsamic braised pearl onions.

Here you go; Two way pork. Pork tender loin stuffed with apricots, pork loin stuffed with chipotle chutney, rubbed with Simply Marvelous, served with a chutney/Dijon cream reduction, a cranberry wild rice pilaf, cumin and honey glazed carrots. I had to resort to soliciting neighbors to feed.:eek:

Did some wings on the Weber at 400 degrees and ended it with some chunks of pineapple. Fried some taters in the cast iron and added some cold greens to the plate to balance the meal. The wings were marinated in oil based italian dressing and a nice layer of Plowboy's Yardbird. That rub is sooooo good. Put it all on a platter and then attacted it!!! Have a great week brethren and looking forward to your Thanksgiving cooks. Use whatever pic you want for the throwdown bro.

Master was busy with experiments and asked I (Gore) to prepare something "hot, fast and phun (for Phubar)". Of course we must grill fattie very hot and fast, with roasted red jalapenos (also hot). There is nothing faster and funner than hot wheels. I (Gore) hopes that Master and Phubar will be happy now.

Due to a misunderstanding, I left out barbefunkoramaque's entry from the original VOTE thread for this Throwdown. It is my mistake, and what I get for trying to determine what are "joke" pictures and what are serious entries.

We have had lots of joke pictures submitted before which I have intentionally left out of voting because they aren't real entries. This time, what seemed to me to be an obvious joke, was actually a legitimate entry.

Donnie, you have my sincerest apologies. I know it probably felt like quite a slight to be passed over like that, but I assure you, I had absolutely no bad feelings by doing this. I would hope that from our past conversations you would know that this was not intentional. I was simply doing what I thought was the right thing to do at the time.

I will be submitting a new VOTE thread shortly.
