I was just perusing the gator pit site, www.gatorpit.net, and found the Gator Pit Upright Water Smoker, lists at $2600.

Specs are:

Specifications and Features: ¼” thick pipe and ¼” thick plate, 24” x 24” grill and gas assisted firebox, with sliding food tray, sliding charcoal tray and removable wood grate, Upright is 24” x 24” x 48” with five sliding food trays, water inlet for water smoking. I'm sure D. Klose makes on similar but here's a big Bandera-type smoker and it's even got a gas burner side-car :D Oh, by the way, they'll trailer mount this if ya wanna!

That one's getting there. Biggest design issue (IMO) with this one is the round top fire box. Should have went flat top for pre-heating splits. Other than that - very nice rig. $2600 though - why not the BYC?

I have no issue with the BYC -- just this one is "like" the Bandera in that there is no horizontal cooking chamber between the firebox and vertical cooking box. Phil has said he hasn't used the BYC vertical yet (unless I'm mis-remembering) because you have to get the horizontal to about 300-350 to get the vertical to around 250. Most sites I've seen when addressing the BYC type setup say that the vertical is usually 190 or so -- most use for warming and holding food or cool smoking sausage, etc.

Just a difference in technique -- I'm sure Rich could build you one with a flat top firebox!!

Hey, I'm just dreaming and hoping for a Bandera or horizontal offset cooker for Christmas! I like the Brazilian cooker because it has the vertical box getting more direct heat and the horizontal is there for the overload -- I, like many of you, like the vertical cooking chamber and am just looking around and trying to share what I find.

When I spoke with Richey Robin at Gator, he pointed out that with his version of the BYC configuration, he uses tuning plates in the horizontal chamber to help get the heat from the firebox through the horiz. to the vertical. This way, both the horiz. and vertical chambers can be used for cooking, at the same time. And you can also configure it to cook in the horiz., and "hold" in the vertical, more like the BYC.
