Well, its been 3 years.

Finally did my first boston butt.

I did it in the WSM, since I am still testing for Tday.

So here goes.

First off. The grate above the water pan is 40* lower than the top grate* in the WSM.

Top (pork loin) was wrapped in 3 hours (160*) then another 1.5 hours to 190* and in the cooler.

I had my first pork butt (bone in) on the lower shelf for first 5 hours till pork loin came off. Then to top, after wrapping at 160*.

So I wrapped the pork butt and kept it in there till 7:30pm, having started at 10:30am. Mary (Phil) told me to expect 1.25 hours in the bandera, or somewhat less in the WSM.

Well after alot ALOT of farking aroung, the WSM stayed at 268 for 4 hours. The butt finally hit 190. Then, my farking kids farking around, so I didnt pull it off till 193.

In cooler. It hit 203 in the cooler.

Waited 2 hours. (15 minutes ago) and pulled it out of the cooler at 189

I took Richies gloves, now I am seriously thinking of a seperate thread to address these gloves (cloth gardening type gloves, covered in a layer of rubber?) and pulled the butt.

DAMN!!!!

The friggin bone completey fell off. The frigging meat was like budda. Damn it. Lunch tomorrow will be heaven.

My 11 yr old and I sat there eating up the feast.

Can't wait for Dreamland and a bun.

First butt was a farking success, and i got 2 more!!

Not to take away from Dream land but pork with GenuSwine BBQ sauce is ****ing awesome. Need to order some more. ~$16 A gallon by the case.

I just picked up 3 of them at jewel here for .99 a lb. will be doing them next weekend hopefully.

Patience is a vertue -- especially when cooking butt or brisket. The hardest thing for me to do is wait after I've taken the butt up to 200 and then into the cooler -- that cooler time is important!! :D I try to wait until it's back down to 160 or so and that can take several hours.

Rubber gloves are a huge help. I just picked up some heavy duty Rubbermaid (black/blue) and while they still let my fingers get warm it was a huge improvement over two forks or the "ouch" method of pulling pork.

Glad to hear thing came out right -- home cooked pulled pork is sublime!! :D

I read a thread where people said pulling 10 buts took foreever and their hands hurt.

These farking things. Unless I did it wrong, I pulled my first 8.4# butt in about 3 minutes.

Thick thick gloves, even the meat being 189 didnt faze them. Never got hot hands.

Farking awesome.

Only thing better, if that, would have been thermal scuba diving gloves. Wonder if Craig NM uses those?

I bought those at Harbor Freight but I don't see them there anymore. One pack contained 6 pair. I even went to their web site and couldn't find them. Went to northerntool.com and saw a red pair for 2.99. (item #170175). I shoulda stocked up when I got the chance but I've been using the same ones for a year now. They're pretty durable. You might also check at AutoZone or Advance Auto, I saw some similar ones there but didn't get the price.

In fact, when they get nasty, just throw them in the washer. And when you're done cooking, if you're not gonna wash them, at least spray the cloth part that goes around your wrist and the inside with Lysol to kill the nasties.

They can also be found at Lowe's near the hand garden tools. I am on my second pair. I didn't wear my first pair out, I threw them away. (that story involves womenfolk flushing things not meant for plumbing)
