Leaving right now to pick up 4 racks of ribs and something for lunch. Maybe red hots. Gonna spend the day smokin, drinkin' beer and listening to Auburn football. Ya'll come on over! :D

I've got a 6# brisket (flat) working in the ECB. Coming up on 165 so will be foiling and adjusting the fire for the final 40 degrees.
RE the thread on brisket technique (I like the tech-ni-que!!): You guys are thinking about cooking the brisket WAY too much :D You'll scare off the new comers!!

I have 14 chickens thawing in the fridge getting ready to smoke on Sunday, deer season opened today so after work I will be out hunting and won't have time to cook.
I have 2 slabs of smoked ribs in the fridge that I will throw on with the first batch of chiks to re-heat them. They will go good with a cold beer and sunday football (go Eagles!)

$44 at WalMart and I was glad to get it!! :D
Angling for an offset (prefer a Bandera but will definately not kick a Hondo, Black Diamond, or the Quickset cast aluminum barrel out of my backyard!) for Christmas.
Actually, for the bucks the Brinkmanns are pretty hard to beat -- not much fire control but they will teach you how to do 'que.

Thanks for the info and the link. I own a ECB and that's how I learned to smoke. I still use it for small loads and when it is raining. I can just put it on my porch and still smoke and not get rain in my beer. It makes great Q but is hard to get very hot.

How true. I still use water in the water pan (go figure) so I rarely get above 250 at the bottom grill -- the top will get a bit hotter. If you use the sand mod you can probably get hotter temps - but then I try to stay right around 250 anyway. If I want hot I go to the gas grill or pull the water pan and go grill style.

Let me add this:
At first glance, the name "ECB" is kind of a negative.
However, after seeing that name often enough, I came to realize that it is actually a term of affection.

ECB is descriptive of what you get!
I like my "Gourmet" model at $44. But I could probably do as well with the $29 base model or the Charbroil H2O (well, maybe!).
They are cheap!! But I've learned a lot with mine and have been really trying to learn the different capabilities and qualities of the offset smokers available. If you look at the archives you'd wonder why the heck anyone would want a Bandera :D First thing you do is acknowledge that it's a fuel hog, then you add at least two modifications to the thing (heat deflector and charcoal basket/grate). Then you thing about insulating the thing (step away from the lawn chair cushions! :D) and installing door gasket materials.
All that aside, the Bandera is fun to cook with -- if you understand 'queing and see why these things need to be done.
So, yes, ECB is a term of endearment -- but I ain't group hugging you until we've done Wabo together :D

Okay, you farkers got it all wrong, and right.
ECB, yes a term of affection. It is now my portable smoker. I am going to Indy, I toss it in the back of the van, and bam, have smoke-will travel
Secondly, I live up norht, so I learned that this baby runs HOT. I use a Cablea's smoker sleeve which raises the temps 50-70 degrees.
Any of you want to try one, just PM me and I will order you one.
The ECB is great for raosts and turkeys and such that you don't need too fark with, and its only $29 bucks here at menards. Funny, since the sleeve is $35
