Wow...that's some pile of ribs!

Just pulled off 2 racks of bbs and a pork butt. But I thinking I'm heading out to St. Charles for a little snack!

Hi Davewey,

Couple questions:

1) What's that floating in your Bandera water pan?

2) Which of the baffles are you using? Are you using the one with the circular cutout for the water pan?

damn!! that is one packed Bandera. !!! Did you find it difficult to get the top up to temps and have the bottom running hot??? I had troble keeping temps even when i packed that much stuff in mine. Thats why I went to using racks for the ribs. I found standing them on edge improves air circulation.


looks like onions in the waterpan.???

Yep, onions and garlic does nothing for the taste just adds to the smell.


Did you find it difficult to get the top up to temps and have the bottom running hot???



I kept moving the racks around; Temp was uneven probly 75 Dif from top to bottom.

By the way it was the first time I used Southern Flavor as a rub OUTSTANDING!!!

I didn't see any pics of the finished product??? Did you eat it all before you had time to take a picture?

My wife thinks I am loony for taking pics of meat before ,during, and after smoking ( even have a home video I made on how to do ribs). Its good to see that I am not the only one who does this.

Ribs look great!!!! :)
Also great lookin kid in front of the Fridge (Hand caught in the cooky jar look 8) )
Too bad they grow up. (Mine's 29) :cry:
