Good think I got my weekend Q fix in on Firday.. Which BTW, turned out awesome. took what was about an 8Lb roast(bonless shell steaks) rubbed it with some montreal seasoning and SF Black. Stuck it in the WSM at 255 for about 4 hours. (with a Brie cheese wheel). Took it out at 140 and threw it on a real hot grill for about a minute on all sides to char the outside. Let is sit for about 10 and man was that the juiciest steaks i had in a while!!! . the rest brough it up a little more toward the med-med-well zone, so next time I take it off at 130-135 before the searing.
Was hopin to do some sausages and beer butt chickens in the bandera today. had everythign ready, but this morning the skies opened up and its been dark and raining all day. Wasnt in the mood to be soaked all day goin in an out, we habve a whole winter to do that..
So the beer butt chicken turned into 2 pots of chicken soup, cookin away and I saved one big bird to put on the spit later. Its gettin happy with tony Cs on it and some basic rub. Got a smoked brie in the oven that i made witht he roast on friday.
Hope this rain everyones been getting is not a look at the winter ahead..... REMEMBER last winter.. rain, snow, snow, rain, snot, rain, more rain.
