Just wanted to pass along what's for supper tonight. Over a nice red oak fire we have......5 top sirloin pieces that smoked for 2 hrs before finishing up over the fire.....2 pieces of cheesy bread and sauteed mushrooms.

Smokin' before grillin' is one of the best ways to do steak.....

Never tried smoking steak, going give it a try, right after I get a FARKING JOB!

I have smoked steak, and not grilled to crisp up.

Need to watch the temps or end up with jerky.

On the new WSM tomorrow, took out a turkey breast of 9#, a rack of spares, and a pork loin, and a package of thighs

Can't wait for the new tow.

I have smoked steak, and not grilled to crisp up.

These actually didn't need grilling afterwards, they were just right. Fork tender but not as juicy as those done on the grill. Note to self: Next time get some really thick steaks. The thin ones don't do so well. You're right about temps though. 200-225 is plenty....more than that and they dry out quick. The bread was good but too smoky for the wife. I think I'll try a more fruity wood next time. It was still a good excuse to sit out back with some Buffett playing and a beer!

when i do the bread, i bring it up to 300-350.. and keep it in the middle...


then theres always that two shelf technique, which melts the cheese in about 5 minutes.

I don't need any excuses to sit out back and listen to buffett, and drink beer.

I wasn't even thinking but that would have been a good heat shield test too. Install the shield and keep the bread in there about 10 more minutes. I'll do that next time. When I took the bread off, it wasn't melted like I had hoped but it had a lot of flavor and sure made for good leftovers yesterday....mmmm...mmmm...mmmm.

Hell, I have no recollection of how I made it to bed last night.

Last memory, me getting like my 12th beer out of the fridge (I needed to slow down after starting on JD and Sprite) and my wife saying "Do you really think you need that?"

Next memory "Ring Ring Ring" of the alarm (and my head) at 5am.

That would be sauteed mushrooms. A little bit of wishbone italian dressing, worcestire sauce and butter....cooked them as long as the steaks with the steaks dripping into the pan. Next time, I want to leave the mushrooms whole by themselves on a rack for about 30 minutes, take them out and slice them and then put them in the pan. If I could've taken a little bit of that smoky flavor out of the bread and added it to the mushrooms, it would have been perfect.
