Anyone out there know if either the Bandera water pan, or the ECB sized water/charcoal pan, will fit in the WSM.
I was going to order one online today, if it does, cuz I want to reduce the risk of running out of water on an overnight brisket.

I am very interested in the WSM, especially after finding that website I linked to you. Great step by step recipes for everything (I may try the octopus too!) I think it would be a fine addition to the Bandera for smaller Q's and for an all night slow cook without too much attending.
Let me know how the brisket turns out

After talking to him at B2, I was convinced i was going to get one. He can't speak highly enough of it, and of that site too. I shoulda checked there first.

Gary busy with $hit pants mod, but agreee with him 110% regarding WSM. Firts unit I had many years ago and been kicking myself in the ass everysince.

Thought there was a reference to a baby or something (Josh Mod) but now I recall.
I'm starting to work up my Christmas/Father's Day/B'Day list and a WSM in going to be on it. I like my ECB but the way everyone talks about the fire control on the WSM -- gotta have it!
I'd love to get a Bandera (old or new or even the Brinkmann!) or perhaps another offset smoker but I imagine the WSM will come out on top as far as the spouse and boys are concerned -- price from Amazon with free shipping is pretty good.
We'll see! I was even looking at concrete blocks and cooking racks trying to figure out a design for a LARGE structure in the backyard :D

I think I read on the virtualweberbullet tite that the bandera waterpan fits the WSM, but i will confirm tomorrow. The ONLY complaint i have with the WSM is capacity. Its really a single family smoker. I did 6 racks of ribs in there last week and had to rotate the racks. 2 briskets, your full up. good for weekend lunchs with the wife & kids, but dont count on it for parties.

Bill I use sand in the water pan. first line pan with heavy foil, fill 3/4 with sterile play sand, got mine at HD about $5/50lbs bag, cover sand with several layers of foil. Real beauty of sand/foil is clean up. Just let unit cool overnite then remove one layer of foil with all the grease and stuff. Sseveral threads on this and other lists have debated the difference between sand and water, I think the sand works as well as the water without the hassles of water, both act as a heat sink.

I got mine from Amazon for $155 with free shipping. Never seen it cheaper. Mine's still sittin' brand spankin' new in the box down in my basement, along with a 22" Kettle (Silver of course). Guess the Bandera is working fine.
Agree with everyone -- the WSM is about the same size as my ECB -- and I really do want a larger smoker. Gary thanks for the additional input about the sand -- I keep thinking about doing it but haven't tried it in the ECB. Maybe I'll pick up a bag of sand on the way home today and try it out tomorrow.

You can always fill the pan with some of that Mud.
And there are a few WSM mods that will add a third rack, and you can add a second WSM for a total of 6 racks.
At 155, two would be right near a Bandera.

True.
To me, the Bandera is great for ribs and loins, stuff you need to keep farking with and wrapping and spraying and mopping, etc.
I love my bullet (and now the WSM) for turkey's and chickens, stuff you can spray from the door if you need to, or not mess with at all.
That's how a brisket will be too. But the crap you got to wrap and rotate, that is Bandera only. (or rather preferred)

I agree. I have decided that I am going to get a WSM. That's the type/style of smoker I always had before the Bandera. Set it and forget it for the most part. Use the Bandera to do the 9 - 10 slabs of ribs I am doing this weekend. Can't do that kind of quantity in a WSM.
You can always fill the pan with some of that Mud.
