I'm putting a 12 pounder in the beast this weekend, but I will also through a whole one in the WSM, probably 14# this weekend too, with wibs of course.
1st time doing whole birds in the beast. Do 7# breasts all the time.

David;
the answer to your question is a question. How many hours are you willing to babysit your smoker?
A few years ago I did a couple of decent size turkeys for Thanksgiving. Took about 15 hours. So count back as far as you want to go and that's the size.

PS: I ended up taking "thermal burn" to stay awake and couldn't eat for 2 days.

turkeys take between 45 minutes and an hour per lb.(i use 50 minutes to get an Idea). You do the math.. How long ya wanna babysit?

What's an easy weight for a first try at turkey. I wouldn't tell somebody to try a 14lb brisket as their first, so I figured a turkey might be the same way.
