Anybody ever smoked Tuna ? A guy has offered 30 lbs of it he caught out in California. I normally put cooked tuna up there with rice. But smoked maybe diffrent.

Oh hell yeah. I know I'm gonna catch some crap but look for a smoke mullet recipe -- no joke! It'll give you a nice rub and/or mop for the fish. You could probably smoke it like salmon but the tuna is a bit more robust fish and could proably use the slightly more intense seasoning.

Just my $.02 worth.

I smoked tuna before. Albacore is the best . But whatever species, cut into steaks and remove the two strips of dark brown flesh that run the length of the fish as they taste rather bad compared to the white flesh. Liked better than smoked salmon but think good tuna should be primarily eaten raw (shashimi style: sliced thin, mixed with some sliced onion and hot pepper and left a few hours in lime juice and soy sauce in the refrigerator to"cook"). Be sure to have plenty of cold beer around because this combination is one of those matches made in heaven.
