View Full Version : smoking a turkey--Success!!

:D I had company this weekend and had to throw something together on the quick, so I smoked a naked brisket, and a whole turkey. The brisket was a little on the tough side (aka coulnd't cut it with a fork) because I forgot to increase my time over what I do when I have brined it. The turkey on the other hand, came out WONDERFUL! The only thing I did was pull it out sooner than normal. The breast was so tender it was amazing! I realize on this one I am not really saying anything informative, but I have been working on getting turkey right for a while and it really felt good to nail it.
Turkey has some advantages:
1. I get tired of the usual Q all the time
2. My stepson loves to put the turkey in his lunch and at .98 a pound versus 4.00 a pound for store bought lunchmeat, it makes a difference in our budget.
3. It really rounds out catering a party--turkey for some, pork for some and beef brisket for others.
4. Thanksgiving is coming.

How about some details on how you did it? I would like to do one next weekend but would appreciate some guidence.

I always wait till the stores around here put turkey breasts on sale and but up a few. I just throw them in. If they come with the pop-up timers don't trust them. I usually put the turkey boob under whatever else I'm cooking and the timers get gooped up, just go by temp and they turn out great.

receipe sections have a 2 turkey brines and injections I use. The honey/maple brine is excellent. Take a look. I made alot of fans last thanksgiving.
