Found it at ACE hardware yesterday while looking for some plumbing stuff. I walked buy it, it tapped me on the shoulders, i ignored it so it followed me and kicked me in the shins. So I had no choice but to bring it home and burn it.!

Phil- I don't think you have to hang your head in shame about that silver anymore...

I like my silver. It cooks just as good as some of those snobby golds and there owners  My silver is equivalent to the jeans and sneakers type, while that gold is for someone who wears cufflinks to BBQ's.

honestly, since i just started dumpin the ashes in a pile in the woods over the fence, i havent gotten anywhere near as pissed as when I was dumping them in a can and getting an ash bath.

So then with that you now have 1 smoker per person for B2!

You may have a problem Phil. You might want to get help.

As for me I won't complain. I've thought about getting one so I'm looking forward to getting to test it out!

Not complete until you rivet your jeans and sneakers together. You won't have to worry about loosing the set that way. It's a Chicago thing.

Phil;

I think I hate you! :D

Not only do you have the Klose BYC, Bandera, two gas grills, turkey fryer, the Weber Silver and who knows what else -- you now have a WSM.

AND, your cooking on a Thursday. ****!

I've got my ECB, gas grill, and turkey fryer and I get to go home to salmon patties --- kiss a duck!!

A Weber is a Weber is ROCK AND ROLL BABY! I love my Weber - I gave my Silver to my dad (it was 10 yrs old) when I got the Platinum (sorry bros) for my birthday 2 years ago. I wanted to sell my Bandera and buy a WSM but decided not to. Then my sister-in-law asked me what kind of smoker she should buy for my brother for his birthday and I, of course, told her the WSM. I am green with envy - but my wife knows I would love a WSM and asked me the other day if I would ever want one. I said YEEEESSSSSSSSSSSSS!

That as covered by "and who knows what else". I'm going to have to build either a Wilber D. Hog or Sunset concrete water pipe smoker just to be able to hang with you :D

How is Pugh coming along?

Have you done anything with the sewer pipe yet?? Should I bring my angle grinder and welding mask?? :D

BBQchef33
09-11-2003, 04:49 PM
yeah, the sewer pipe is a make believe fire hydrant for my dog.

R2D2 is fired up. There are 2 eyerounds in there. what i noticed first thing.. SMALL SCALE.!!

3/4 of a chimney and 5 chunks of mesquite had this thing spewing white smoke like my ECB 10 years ago on my first try and smoking. I was wishin Craig was here with his mask and snorkel to fish out some of the mesquite. I had the mesquite in the chimney with the charcoal before i put it in the WSM so it was ignited nicely. Once the fuel went in and i covered it the little beast, with all dampers wide open, it still choked out the wood. i pulled all but one chunk and put in a few small splits of cherry and oak.

The coal bed seems to stay VERY low, no red to be seen, meaning, not enuf to ignite a piece of cold wood without it smouldering a bit. So when I added wood, i used the door to fan the fire a bit till it ignites. Going on 2 hours now. Been rock solid at 244 on 3/4 chimney of kingsford. Damper settings right now are wide open on top and all 3 bottom ones at 1/2. No visable smoke at all coming out.

i was gonna save maiden voyage for bash II, and let Gary give us all a lesson, but i couldn't hold out.

Gary, gimme some insight on Damper settings and fuel load. How much should i be starting with?

Guys, I agree with Phil, the WSM is small scale compared to the Bandera. If you are thinking of moving up, I encourage you to take a look at the Backwoods Smoker, http://www.backwoods-smoker.com/. I bought a used Party model with the competior upgrades. It came with 6 shelfs about the size of the Bandera's, so I have a little more room than the Bandera. I go an unattended five to six hours at 225 - 250 on less than a chimney of lump. The "Q" is great.

I ain't gonna let you pull no smokey mountain bull**** at B2. Throw that farking thing out.
You will need all your BYC tools to pass my test.
he brothers are counting on me to keep you honest.

Since Bill has put the law down (see above) I will volunteer to tend the WSM -- since I only have and ECB it will be a move up for me and will not demean Phil's position as Grand Poohbah!! :D And Bill can then be able to "show you how to Q" without worrying about Phil being distracted by the Weber. :D

Hey, my response is still showing up as if David wrote it. Willkat98 writes:
Whoa. Again, completely no recollection of writing this last night. I don't even know what the hell I'm talking about. I think I meant "show you how to drink, not Q"

Am I answering Phils post? I don't have a clue. SMokey Mountain Bull****? I can't even remember how I got to bed, let alone saying anything like that. I never even saw one of those before Phils pics.

That's it, I'm going sober again. (But damn, I just bought a 1.75 of Cuervo last night)

chad

Whoa, things are a bit messed up.

For the record: Bill has/had the 1.75 of Cuervo. I only offered to watch the WSM :D

Sorry I'm late with this, I use the Minion method, as modified by someone on Garrys list, cover the bottom of the ring and several chuncks of wood han cover with more lump. add more flavor wood chunks than add 1 chimmney of lit coals on top. assemble unit top open full bottom three open only about
1/8"-1/4" let white smoke die down about 15-20 mins. load with meats and this should go at least 5-6 hours with out refueling. I only adjust with bottom vents i always leave top vent wide open . Keep in mine that the wsm tends to run about 50 deg. hotter until broken in. This unit is a set it and forget it unit.

I was going to bring mine down to bII, I still will if you think we need it, let me know.

i have the backyard chef with an extended main chamber, the bandera, the hondo, the WSM and the Weber Kettle, then a 48" commercial grill and a Broilmaster grill, sooooo......

Unless you want to use your WSM, i dont think we'll need it, but another toy is always fun to have. Besides, part of the fun is cookin on different things, so you AINT ALLOWED to use the WSM. :) btring it if ya got room. We may appreciate it after cookin for 2 days and we can get the extended burns.

BTW, Weber stuff is porclein(sp), it doesnt have to be seasoned. Thats for metal chambers.

You know, I keep reading about these, about how two lumps of coal lasts forever, but I just can't justify the cost when even the largest farking egg can still only fit one large turkey.

I agree ceramics would hold heat awesomely, but 1 farking turkey. That is only for the non working types that can Q all week long. My Q time is limited, so I can't waste it on just one cut of meat.

Yes your right however it will burn differently after several burns. I don't know why, other people have had the same results.
