Looks great. Rice is a great side for any dish :D

I've got to get a cooker big enough for a whole filet or slab of ribs. My ECB just isn't wide enough for the big cuts.

This one was just lemon slices, olive oil, salt and pepper. Cooked over alder. Farm raised so not as good as wild, but the rice makes the dish.

Not much left, wife and I ate about 2/3rds of the filet.

Rubbed with Boars Breath and slowwwwwly cooked off in the old Bandera. Served of course with Guinness. I think I'm in heaven.

Great looking "ribs on the rocks" with "sides" of real fresh salad! :D
