View Full Version : Maiden voyage of the Smokey Joe

The Great Craig Scalise (trading partner) sent me a Smokey Joe! Hey,it is going to get used a lot! I camp a good deal and this is perfect to take camping! Also, I think I will try it at home when grilling just for my
wife and I. As a matter of fact, I am going to launch it on its maiden voyage tomorrow with some pork chops! The 'dera takes to much charcoal to grill with, by the time the coals are ready, the whole unit is too hot. I think this Smokey Joe is the ticket to eating dinner for two quicker. Anyone have experience with the Smokey Joe? Any tips would be greatly appreciated.

Congratulations! Treat the Smokey Joe like a hibachi with an attitude. I've got a small gas grill about the size of the Smokey Joe that I use as a backup cooker when we're camping.

As far as grilling you can treat it like any other "full sized" grill. Your fire just won't last as long. But, cooking for two it ought to be perfect.

One tip, line it with foil.

Used a smokey joe for 7 years in different apartments where I had limited patio space. Easy to clean that way.

And you can offset in that little thing. I've piled the coals on one side, then some large chicken breasts on the other.

Too many flare ups when I tried to spread the coals out, but experiment.

Kicks butt on burgers and steaks, stuff you like to sear like that.

Now i gotta pull the little puppy out of the top of the shed. Forgot all about it. Havent used it since last summer. Been doing steaks on the big kettle or the firebox in the klose.

My smokey Joe was my "steak only" cooker for years. I fill a chimney half way(little more) with hickory or mesquite chunks and charcoal, about a 50/50 mix. Put it over the turkey burner so it lights the coals like an F-14's afterburner. Put those red hot coals in the smokey joe, and it puts the heat about an inch from a steak. Get a nice thick sirloin or big fat T-bone throw it on for a minute each side and sear the **** out of it, then cover it and close the dampers to finish cooking. Best steaks you ever had.

damn... and I thought you could cook phil... the steak should be done after you flipped it the second time... no need to close dampers... just take off and enjoy

I've had mine for years although don't on it home hardly at all. For home use, I start my chimney's for the beast on it. Otherwise, I frequently take it to parties and do London broils with a Thai type dipping sauce. Goes over real well and makes me stay at the party longer to more drink beers while the coals die out.

Well bucko, that the differenc between me an you.. I can cook.... you spend your time flipping steaks.. Flip a steak a second time??? nope.

Golden rule.... Ya flip a steak once.. that its. Same for burgers, pancakes.. etc... Sear side one, cook more than half way, then flip and sear the other side and cook to your choosing. Medium for me.

So while your playing tiddly winks with your food, I'm eatin perfectly cooked steaks.

mmmmmm... steak..

Fired up the Smokey Joe again tonight! Thanks Craig, I am gonna wear it out. That little sucker is perfect for when I want to grill dinner for two without a lot of fuss. Tonight I cooked half a dozen chicken legs. Just threw in a chimney full of hot coals, set the chicken on the grate and put the lid on withthe top damper half closed. Shut it all the way when I started brushing the legs with teriyaki sauce. Nu muss no fuss and no leftovers. :D
