I thought the following would be interesting to everyone so I've copied a couple of the long exchages here. David, Clearwater.

Also, you could adjust the "math" to three portions per pound and
that give a decent 5 oz portion plus 1 oz for slop factor. Also,
build in a 10-15 percent overage if your "skeered".
Portion estimation, food costs, and portion control are issues that
are hard to adise. I usually over order and over produce but I'm not
trying to make a profit when I cater (at least not yet).
If this party is casual, eat all you want, then up the poundage. If
it's a real "catered" sit down or buffet then you can control it
better.
It ain't rocket science! But sometimes feels like it :=)

My figures are for catering, not Bashing!! A lot depends on the
amount of fat and waste on the brisket (and to a lesser extent the
pork). The approximate 3 oz portions are used for planning only. You
can certainly adjust the figures to "fit" your crowd. This is a
wedding party!! But, I think you'll see at Bash II that (1) I'm not
skinny, (2) I'm not anorexic, and (3) I am definately carnivorous.

Wayne,
If'n you're having sides and bread and such, I'd figure 1/4 pound
per person + 20%(for the fat and bone that won't be eaten). 1/4 lb
for everybody. Even though the men will generally eat over a 1/4
lb, the women and children usually eat less so it averages out.

I must me totally confused with Daves formula!! I interperted this
as "about 5 orders per pound", an order being "a person". So thats 5
people per pound of brisket?? A 15lb packer cut, @50% shrinkage will
yield 7 lbs(more likly 6). So that 6lb brisket at 5 orders per lb
will feed 30 people.!! I know i am messing that up!, either that, or
Daves REALLY skinney.
In my world,(not catering or profit$$ interest) and being
conserative, I would say 7 people per brisket, with other food.
Damn, at the bash, 4-5 of us ate an entire 13lb brisket for
breakfast and that was *with* bacon and eggs, no utensils, just
shoveling it into our faces..
