View Full Version : Hi from Wilson, NY (outside Buffalo)

Hey, all,

I've been lurking here for about a year and a half, but I figure if I start posting I ought to introduce myself.

I've been smoke cooking since 1985. Started with a cheap Brinkman's water smoker, upgraded to a slightly better Brinkman's, and for Christmas 1995 my wife bought me an Oklahoma Joe's vertical roaster, which I have since learned is the "original" Bandera. I've been cooking on that sucker for nearly a decade and a half.

Been scared to try competition cooking but entered a backyard contest two summers ago and a KCBS contest last summer. My plan was to cook the brisket and pork overnight, grabbing catnaps and checking the OK Joe's periodically. Of course, I drank way too much with the team next door, and my catnap idea failed. I woke up at 7:30 and the smoker was stone cold dead!!! If you could have seen the daggers shooting out of my wife's eyes when she drove up in the morning...

Well, I fired things up and ran the smoker much hotter than normal. Barely had enough time to cook the ribs. Pork was not salvageable. It came in DAL. As for the brisket, I was fully expecting to chop shoe leather into little pieces and mix with bbq sauce, but, son of a gun, it was actually pretty tender, so we sliced it instead and got a 10th place ribbon for it. Now I'm hooked.

I have since purchased a WSM 22" with a DigiQ controller, so I don't have to worry about catnaps any more!

Well, off to the competition forum to ask some questions about holding brisket and pork.
