Folks,
I know its real late but is there anyone who can cook the Snowshoe Grilling Challenge with me this Saturday? Its a really fun event but I am leary of going solo on a grlling contest...
It is in Abington, Ma btw...

categories are fish, pork tenderloin, fatty and burger. Burger is open garnish.

Steve I do understand your view on this, but for the bailout my truck was in for service. That was not in my control, except for the $$ that it cost me for the repairs.

Just talked to the organizer, the contest is very lean on judges right now.
So I will honor my commitment and Judge the Snowshoe for the 3rd year in a row! Looking forward to it.

I got a hold of Gary immediately and when he said they were lean on judges I told him Ray would judge and Ray did the same. So I am flying solo and Ray is judging in case you did not understand the last sentence; it was somewhat convoluted.

well, I think I have most everything packed/ready to go so I anxiously await the outcome of this drama. I bought lots of xtra stuff Ray. think I will finish packing up and leave at the crack of stupid in the am. The cooler looks like a science experiment ready to happen...call me if there is anything to report; otherwise I will see you guys in beautiful downtown Abington in the am.

Great time yesterday! It was nice to see everyone, old and new friends. I am glad that I judged yesterday because I ate some pretty amazing entries. Skidder had the most amazing fish entry, well it tasted awsome, but appearance score was not there. But if I had it served to me at a restaurant it would have been well worth the money. It was the only fish entry that left me wanting more.
There were some pretty good burger entries also, WTG Wild Wood (a bacon, onion, cheese burger). But remember it is a burger do not over think it, burgers should be kept to the KISS principal. Keep It Simple Stupid:rolleyes:

Appearance, taste, texture, thats it Ray. Whether the burger is simple or complex, thinking 'out of the box' or basic should have nothing to do with your score.

Chris, maybe it did not come over like I ment it to. There were some pretty unusual entries. There is something to be said when you get served a darn near RAW, not rare burger. Or a burger that falls apart in your hand because of over saucing and with only the top part of bun, no bottom part to the bun. Or even a mini meatball sub, which was questioned about being a burger entry? ( It was determined that because it was a ground meat product...)

I remember when we had the burger category a couple of years ago at Lowell. I put in what I thought was the most gourmet foo foo burger that I could do. If I remember correctly some one won it with an old fashioned Patty Melt!

Yes Appearance, Taste, and Tenderness is what I look for also, but remember the basics too.

Ok something I really don't understand. If your being judged only on the taste,texture and apperance of the meat why is there even a such thing as open garnish?

The open garnish plays into the appearance score. Also you can prepare different dishes when its open... for instance in pork tenderloin if the garnish is open you could stuff the tenderloin with whatever, crab, cheese etc. Standard garnish that wouldnt be legal.

So does anyone know if I can use bacon at Grillin On Da Bay for the Chef's Choice Category since it's open garnish? I was told last year I couldn't. I don't eat or cook bacon so it doesn't really matter, just wondering.

Under NEBS open garnish you can use bacon or anything else at all in your turn in. That includes toothpicks and skewers too if you want....wide open.

The Fatty category was standard garnish. The Burger category was open garnish.

The NEBS garnish rules cover other things like stuffing, wrapping and chunkiness of sauces. My .02 is when stuffing was allowed for the Fatty it should of been an Open garnish category. Per the NEBS rules, stuffing is Not allowed for standard garnish. As soon as it was allowed thats not really standard garnish anymore.

Those are the NEBS rules, but he asked about Grilling on the Bay which is NOT following NEBS rules.

Read your cook's package carefully!

I just wanted to thank everyone who came out for this event again. We had a great time, everything went smoothly, and we raised over $600 for the Abington Food Pantry (which is run by St. Vincent de Paul) IF they take that $ to the Greater Boston Food Bank they get ten bucks on every dollar, which equals over $6000 to buy food for those who really need it right now!!! :shock: They are now feeding more than 42 families a month, which has risen dramatically since last year.

All you guys... teams, guests, judges and all volunteers... are the best, most generous people that I have ever known!! :biggrin:

ONE MORE THING... Gary forgot to mention this at awards but it's pretty farkin' cool so... The GRAND CHAMPIONS of the Snowshoe Grilling Challenge , Wildwood BBQ, gets a free entry to Grillin' On The Bay!
