Hi, my name's James. I'm living in Tacloban, Leyte, Philippines. I have most of my family here. Spent 40 years in the US ... figured it was time for a change of scenery and new adventures. Loving it here. Don't mind the $1.40/pound pork ribs. :twisted:

I was born in the US, lived in Seattle most of my life. I love to cook and bake. Currently, I'm starting to learn to make cheese. I found a source here for cow's milk (took me months to find). So, ordered up some enzymes and am now wasting milk as fast as I can. One of days, it won't be wasted.

BBQ is something I've always wanted to do well. The idea of taking really miserable meat (such as brisket) and turning it into something amazing appeals to me. Of course, taking really amazing meat and turning it into something mind-blowing appeals, too.

As far as equipment goes, I have a Weber Kettle and some no-brand Costco stainless steel smoker that doesn't like to go below 200F. I'm strongly considering building a small smokehouse ... which is how I found these forums. I was looking for plans, instructions, ideas, the works.

Kuya's Kitchen refers to my blog. "Kuya" is the Tagalog (Filipino) term for "older brother" or "older male cousin". I'm the oldest of my generation here, so I hear "kuya" a lot. If someone is interested, PM me for a link ... don't want to show up and start pushing things outside here.

Welcome James. You have found a great place to learn about BBQ and smokers. It won't be long before a drum head chimes in about building a UDS.

Welcome James. I spent a lot of time in the RP courtesy of Uncle Sam. It's a beautiful country. Glad your here. Maybe you can post some recipes for local favorites, like lumpia (especially the sauce recipe) and chicken adobo:cool:

There are really two things I miss about Seattle ... well, three if you count the lack of blistering heat ... Dick's cheeseburgers and Caveman Kitchens beef sandwiches. I love the simple red sauce they put on the sliced beef.

If anyone knows how to make it or something close, please ... post it. The bun (a soft hoagie) I can make. The beef I can make (when a decent cut is available here). But, the sauce ... I'm clueless. I know it's something really simple.
