Howdy!
I'm new to the board and hope to learn from the vets!
I've been smoking for about 3yrs now and grilling as soon as I was allowed to play with fire! :lol:
I've been lurking for the past couple days and already see some mods I'm going to have to do. In the mean time here's a sample of some of my Pron, I still need to upload a bunch of my pics.

The name Hop?
It came from my grandfathers nick name taken from our last name. "Hopkins" My G'paw, dad, and brother have all been called hop or hoppie at one point in their lives by their buds.

Or are you talking about Texican?

LOL Good luck with that! It's gone as soon as it's done. I need to shoot another deer this season to stock up. I also did some jalapeno/cheese summer sausage. Once the weather gets bad I'll spend most of my time on the grill. Untill then I'm trying to stock the freezer with fish and then on to deer and hog.
Nothing better than red fish on the half shell and saltwater quail!

Thanks! I'm still trying to figure out how to cook on this thing.
I found out later that the racks work just as well as hanging for the jerky.
The only thing I dont like is that the smoke box gets alot of condensate when it's packed full of jerky. I need to make a baffle to help with airflow and keep the temps down.

I never thought of that at the time! Good stuff, I'll try it on the next go-round. You really gotta watch the meat and make sure it's dry before you put any smoke to it. If not it gets that bitter taste.
