Have any of you ever cooked the brisket comp here? Paul Kirk talked about winning it in Terlingua, when I took his class this summer.

Anyone know if this comp still exists and where I could get info about it??

Back in my days in the Lone Star state, this was always the site for the annual chili cookoff.
(also inspired a Jerry Jeff album, Viva Terlingua.)

Maybe they have a brisket comp on the side.

There is no such thing as vagatarian chili. There is beef soup but chili has meat a NO BEANS! That's just the way it is....its a Texas Thang.

To me, chili has beans in it. Without beans is just sauce and stew meat (though it is good).

Not if your eating "REAL" Chili, which is the only kind worth eating. :wink:
You won't find any beans in a Chili cookoff ANYWHERE here in Texas, and we got a lot of "ANYWHERE" here! :shock:

BUT - Having said all that. If i make chili for company, there will always be someone (not from Texas) who like's beans in their chili, so for that reason i always make a small pot of good beans (2/3 pinto 1/3 kidney).
IF you must have beans in it, always add the beans to your bowl of chili just before eating it. NEVER NEVER NEVER cook the beans WITH the chili, it messes up the chili, (generally turning it to chunky paste), and in most places around this state you could be shot for doing it - ESPECIALLY in Terlingua! :biggrin:

But back to the meat of the topic- I took Paul Kirks class last year and helped out at his class this year, and do recall him mentioning winning Brisket at Terlingua, but I think it was some time ago. His website might have info on it. Bob Lyons is a friend of PK's and helped start the PNWBA and I was asking about the history of BBQ in the Northwest and was told it evolved from Chili cookoffs and Terlingua was were they became friends and BBQ cooks.

Here is a link for the CASI class, I'll take just about anything fire related to get to play with Rick's wood fired pizza oven!

It wouldn't suprise me if they did or may still do Brisky contest there, but i havn't heard of one.

AWESOME! I will check it out. I have never ventured behind the store...I will be at TICC from Wed - Sun this year but have volunteered to help run the salsa comp with Jeff Nester this year. He is a previous World Champ in Verde. :biggrin:

Hopefully I can compete in it next year. Or do you need to be qualified like for the Jack and Royal?

It is definitely worth the cost. This will be my 4th trip to TICC, gets better every year!

When PK mentioned cooking in Terlingua I really started paying attention. If you cook chili you know about Terlingua, never expected to hear a BBQ King mention it. As TICC fast approaches I remembered the brisket championship and figured I'd ask you all.

Its called the Friday Behind the Store - 21 st Annual Bob Roberts Memorial BBQ Cookoff. Friday 10/31/08, Terlingua Texas.

Texas State Brisket Championship - turn in 3pm entry fee $25
Chicken cookoff - turn in 11am fee $25
Rib cookoff - turn in 1 pm fee $25

Real chili has no beans, that being said, in order to get good consistency for hot dog chili, add beans and put your chili in a blender.
I've never heard of briskit comp at a chili championship or vice versa.

I will say this, Terlingua is a long way from nowhere here in Texas. Prepare to drive for a LONG time to get there.

yeah, I know but its so beautiful out that way. We like Houston and San Anton but Terlingua is just like nothing we have ever seen. We're from the East so stuff like the desert and buttes are pretty cool to us. Plus no TV, cell phone or any other form of a leash to work is a pleasant change.

We fly into El Paso and its only about a 5 hour drive south. I am cooking over @ TICC this year...maybe next year I will plan to ship a WSM to friends in Terlingua and try out the Friday brisket comp. What the heck??

that whole seasoning of the grill thing would never happen while being stored in Terlingua. I'd get to use it once a year and it seems like a waste for a new grill.....I was thinking of shipping one of my old WSM's to make room for the new 22"....seems fair. :biggrin:

The guy who taught the chili class that Brian and I went to has judged the BBQ comp at Terlingua. It is apparently part of Frank Tolbert's comp behind the store. Tolbert and CASI's comps are held the same day in Terlingua, different locations.
