Got the wild idea to build me a UDS a couple of weeks ago. Found the barrel and have everything put together. I love me some BBQ, the only problem is I can't get use to this stuff they call "Carolina BBQ" since I was born and raised on Tennessee Q. With that be said, the reason I'm doing my UDS is so that I can have my type of Q and introduce "real" BBQ to my wife's family. Did some babybacks on a gas grill 4th. of July and my father-in-law said it was the best meal he ever put in his mouth. I guess it's time to do better and show him what real smoked BBQ is like. So, far I have learned a lot and hope to learn more from this great group of Q heads.

Welcome neighbor!.....the best part of making your own Q is that you dont have to have it the way other people like it...you can make it the way YOU like it!
Im not a big fan of the vinegary "sauce" that makes up eastern NC Q either. And I prefer little or no sauce at all.

I know what you are saying about carolina BBQ. The thing that I found is there are a lot of places making carolina bbq. Most of them have no clue what they are doing. the only place that seam to get it are the ones you hear about like Lexington #1. The rest are just making a living off the people who moved here from somewhere else, almost no one in the Carolinas is from the Carolinas, everyone around here is from somewhere not around here.

The best way to get what you want is to do it yourself.

Kingsport-East Tennessee. The best BBQ I have ever had is from a place in Bluff City, TN called Ridgewood BBQ, been around for over 50 years and their Q is smoked country ham sliced, warmed on a flat top griddle and sauce added. The beans are the best i've ever put in my mouth.
